Cajun Chicken and Shrimp Jambalaya. This pasta dish is so full of flavor and Cajun spices. This dish is simple to make and super delicious. You will love this dish. It can be served over a pasta of your choice or over rice. Lets get started.

INGREDIENTS ---- (All can be found in your local grocery)
• 3 oz. Olive Oil
• 3 Boneless/Skinless Chicken Breasts, cut into 1" pieces
• 1 ½ cup of Chicken Andouille Sausage (optional)
• 3 Tbls. Cajun Spice Blend
• 1 Tbls. Creole Seasoning
• 8 oz. Red, Yellow, Green Peppers, cut into thin strips
• 6 oz. Red Onions, cut into thin strips
• 1 Tbls. Cornstarch
• 1 tsp. Smoked Paprika
• 1/2 lb Shrimp (shells, tails, and veins removed)
• 2 Tbls. Fresh Garlic, minced
• 1/2 tsp. Kosher Salt
• 1/4 tsp. Ground Black Pepper
• 2-3 medium Tomatoes, diced 1" pieces
• 1-1/2 cups Chicken-Broth
• 1 Tbls. Chopped Parsley
• 1 lb. Farfalle Pasta (or Linguine or Rice whichever you prefer)
Directions
1. Heat the olive oil in a large sauté pan. Place diced chicken into a clean mixing bowl. Sprinkle the half of the Cajun seasoning and half of the creole seasoning over the chicken and mix well. Gently toss the chicken until each piece is evenly coated with the seasoning.
2. Add the chicken into the sauté pan and cook until it is half done. Add the diced Andouille sausage to the pan and cook well. Add the peppers, onions into the pan and sauté. Season shrimp with smoked paprika and remaining Cajun seasoning. Cook until the shrimp are about half done. Add the garlic into the pan after about 1 minute add the cornstarch. Season all of the ingredients with kosher salt, ground black pepper, and a little more Cajun spice.
3. Add the diced tomatoes and chicken broth into the sauté pan. Gently stir the ingredients together. Continue to cook until the chicken and shrimp are done, and the vegetables are tender.
4. Drop the pasta into boiling salted water, and cook until “al dente.” Follow pasta cooking instructions.
5. Place the pasta into serving bowls. Spoon the flavorful jambalaya over the pasta. Garnish with a sprinkle of freshly chopped parsley.
