Ever tried making Processed Cheese at home?
Here is the recipe of a Homemade Cheese using NO RENNET, NO GELATINE, NO AGAR AGAR, NO EGGS!
This Homemade Cheese recipe is a clear detailed recipe on how you can make Processed Cheese easily at home with ingredients available at home. It costs you about 1/3rd the price and is free of preservatives.
It is 100% Vegetarian Processed Cheese that can be made under 30 minutes!

Recipe :
Homemade Processed Cheese
Preparation Time: 15 minutes
Cooking Time: 30 minutes
Ingredients:
1 Litre Milk
5-6 Tbsp Lemon Juice/ Vinegar
1 Tsp (5g) Citric Acid
1 Tsp (5g) Baking Soda
1 Tbsp Water
50g Salted Butter
1/3 Cup (80 ml) Milk
¼ Tsp Salt
Method:
Heat the milk in a pan, stirring constantly. The milk should be heated to a point where your finger can tolerate the temperature.
Add the lemon juice or the vinegar a tablespoon at a time and stir constantly. Stop as soon as all the milk is curdled. Push all the curdled cheese to one side and cover and allow to rest for 3-4 minutes.
Drain the whey are remove the cheese on a strainer.
Wash the cheese to wash away all the acidic tones of the lemon juice. Squeeze out all the excess moisture.
Next make the Sodium Citrate Solution.
Dissolve the citric acid in 1 tbsp water till all of it completely dissolved and you have a clear liquid.
Add the baking soda to the solution and mix in. You need to allow all the bubbling to stop. Mix again and stir till you have a clear liquid with no residue at the bottom. Once a clear solution is obtained, you have the Sodium Citrate Solution ready.
In a Blender blend together milk, butter, prepared cheese, sodium citrate and salt. Stop Scrape, repeat until you have a smooth mixture ready with you.
Remove the mixture to a double boiler. Cook over double boiler for 12-15 minutes stirring all the while till you have a smooth stretchy cheese ready with you..
Grease a plastic container and remove the cheese to the greased plastic container.
Cover and refrigerate for 4-5 hours.
The cheese is ready to be used anyway you may need to use processed cheese- in Pizzas, burgers, sandwiches!

I have two questions, first is that when you had put in your finger in the hot milk& added nimbu ka juice, did u put off the gas, ya the milk was still on fire? Second question is that can I use salt free butter & even don’t put that extra salt? As I am totally on salt free diet. Please advise. Thank you

Keep the flame on and milk should be like warm, for better results keep raw milk aside for 2 hours (not in fridge)

Very Good. It was hard to imagine that such cheese can be prepared at home with easily available ingredients. Although the process is lengthy but worth to try. If it would made perfectly as available on shops then it will be awesome.

I never get so much of paneer in IL of cow milk. Just wanted to know if the quantity of other ingredients is as per the quantity of cheese(paneer) or as per milk? please clarify

I guess It depends on wat kind of milk you are using, if you are using tetra pack ones, try using the normal milk
