How To Make Chi Kofte (Armenian Steak Tartare)
1 cup bulgur
1.5 cups cold water
1 cup spring onions, finely sliced
3 tbsp parsley, finely chopped
1 tsp salt
1/2 tsp ground coriander
1/2 tsp black pepper
1/2 tsp sweet paprika
1/2 tsp ground cumin
1/2 tsp ground chilli flakes
1 tbsp tomato paste
1 tbsp red pepper paste
1kg beef mince (lamb can also be used)
Drizzle with olive oil

İts çiğ köfte ( ciğ means Turkish raw )

Thank you Henry for all your videos, you are an excellent chef and I like your recipes, but I just want to tell you that using raw ground beef in this recipe is not safe and dangerous health wise. You can use raw ground lamb it's safer, but still can cause health problems to some people, The best way to eat ground meat is to cook it. I don't mean to be nasty or disrespectful at all, and like I said in the beginning of my comment Henry is a great chef and I have special respect for him. I was just giving him a warning and to be careful because some people don't agree with raw meat and some like it, and the recipe that Henry made is popular in the middleast.

Also called in arabic la7ma' ni3 (lakhma nia) also please don't add tomato paste! And the chillies are not good in my opinion

You need to use fine bulgur, people who see this and who don't know what is cig kofte, will have a wrong concept about it.....

There was a rather nasty comment on earlier on how this was totally wrong... and I think that was down to turkish vs. armenian variants of this recipe. Each to his own, I guess. Looks rather delicious, monsieur :)
