Ingredients:
Filling (middle layer)
- 2 lbs. ground beef
- 4 onions, chopped
- 1 ½ tsp. ground black pepper
- 1 ½ tsp. allspice
- 2 ½ tsp. salt
- 4 tbsp. pine nuts
- dash cayenne pepper
Kofte (top and bottom layer)
- 2 lbs. finely ground beef/chikofte beef (see chikofte recipe video to learn how to make it yourself, omit the onions)
- 1 tbsp pepper paste
- 1 onion, blended
- 4 cups bulgur, #1 or fine
- 3-4 cups ice water
- 1 tsp. ground black pepper
-pinch Aleppo pepper
- salt to taste
Topping
- Pine nuts
- Butter
- Extra Virgin olive oil
- Ice water (to dip your hands into)
Baking dish: 18x12.5 inches - serves about 10 people
