The tumeric is also antibacterial, as are black pepper, clove, nutmeg, cumin, and cinnamon. If you do use chicken thighs make sure to trim and remove all the fat as this will become rancid as it oxidizes. When we make ours we put the poached cooked chicken in the freezer for an hour to firm it up and slice it as thin as possable, for each tablespoon of salt we also add a teaspoon of MSG. For those that piss and moan about MSG i suggest you do your own research and not just listen to the media morons that spout BS that "everybody knowns that", you are bright enough to want to make your own bouillon be bright enough to think for yourselves.
