INGREDIENTS
1lb of cooked spaghetti
2 cups of diced cooked chicken
1/2 lb of fresh sliced mushrooms
4 oz of softened cream cheese
1 can of cream of chicken soup
2 cups of shredded sharp cheddar cheese
1 cup of milk
1 tsp of garlic powder
Olive oil & 2 tbsp of butter
Salt & Pepper to taste
INSTRUCTIONS
In a large oven proof skillet, add enough olive oil to cover the bottom of your skillet. Heat oil on medium high heat. When oil is hot, add mushrooms and butter. Cook mushrooms until nicely browned.
Turn off the heat and add the cream cheese. Stir into mushrooms. Add soup and milk. Stir until creamy and no lumps. Add seasoning.
Add chicken, spaghetti and 1/2 of the cheese. Stir until everything's evenly covered in the sauce. Top with remaining cheese.
Preheat oven to 350 degrees and bake casserole for 30-40 minutes or until bubbly in the center.
Great additions would be broccoli florets, green chilies, red pepper, 1/2 cup of sour cream, panko bread crumbs......make it your own creation!
