A warning about the O-Cedar sponges - I've had a lot of those peel apart because of that green foam that is sandwiched between the scrubby side and spongey side. Usually the sponge is pretty well worn by the time that material/adhesive breaks down, but especially if you do a lot of heavy scrubbing, it'll happen faster. Still good sponges, just flawed, in my experience. I went back to buying Scotch-Brite Non-Scratch sponges, which are very similar, minus that bumpy topography on the scrubby side.

Um, not so much. She got the first part right (Woos-ta) but shire is pronounced "shir" unless it stands alone. One syllable. Woos-ta-shir.

OMG!!! Made this Classic Sloppy Joe recipe tonight and it is fantastic! I will never make Sloppy Joe's any other way. Living where I do (Niagara Falls Canada) it is very hard to find potato rolls BUT one of the grocery stores does carry Martin's Potato Rolls and they are the best for this recipe (or anytime you need a roll/bun). Thank you for all you do to test recipes and put them up there for us. Have cooked a few of your recipes and never a fail. ❤

When I was in elementary school in South Georgia, about 10,000 years ago, sloppy Joe day in the lunch room could soothe most of the childhood traumas. It had a bright orange color, so I'm sure that ketchup and mustard (French's, of course) were major ingredients; but if Elle and Bridget recommend a different recipe, then hey, that's good enough for me!

That science of onions is why Genovese sauce is the best. After 10+ hours of slow cooking, the onions and the beef meld together and become one glorious flavor bomb.

The original (I think) had bell pepper. I was surprised it was omitted here. You could add it with the onions into the baking soda treatment to cause quick breakdown.

@@kenmore01 I think bell pepper added a good flavor that I remember as a kid. I'll try this recipe exactly as it is and see if I need to add some bell pepper. Grating the onion will make it dissolve, too.

Recently, and made lunch for my office. Had a huge salad bar, I had beef tips and rice vegetables, a couple of pasta dishes and vegetables. THE Most popular thing I made was sloppy joes on King's Hawaiian rolls. People went crazy, they've not had sloppy joes since they were in high school. I was so happy I did that. BTW The baking soda and water trick is great if you're dealing with a tough cut of meat. Especially if you're making Chinese food

I fry the onions and beef together with seasonings before adding anything else! Been doing this for over 50 years and I will not change my method!

I actually like a slightly crunchy onion in my joes. In fact I put onions peppers and mushrooms in mine. With those modifications I can't wait to try theirs!

I used to use a dough cutter to chop up the ground beef. I did this for spaghetti sauce as well.

The netting that fruits, vegetables, and garlic come in are fantastic scrubbers and do not scratch. So much better also than getting all that junk in your sponge.

When my grandmother was 30 years old during the flu of 1919 she served meals to the neighbors who were sick (most died) but she never got sick herself. She said her mother told her to take herself and give to all her kids a teaspoon of baking soda dry in their mouth to swish around and swallow three times a day. None of them got the flu. Not sure if this was a real preventative or just all where lucky. I did the same last year during the pandemic.

I like to cheat when making cookie ice cream sandwiches: buy individual pints and turn them on their side, leave the ice cream in the pint and use a serrated knife to cut perfect circular slabs. Peel off the cardboard and put between two cookies. YUM!

To each their own. I don’t like ketchup but I love chili sauce so I’ll probably use that instead. My Nana always put carrot and peppers in her sloppy joes. I like the flavor and texture. The baking soda technique is genius. The wonderful thing about food is we make it our own.

I solely use silicone sponges and I haven't had much trouble at all with food getting stuck. They're flexible enough that you can bend them and spray them with hot water and the food just comes right out.

My sponge is not a sponge but a bar cloth. I like being able to wash them and having them a lot longer than sponges. I use a nylon scrub pad for the hard stuff

You didn't include the red and yellow scratchie ball that's so handy in the kitchen, lol. YES, I know it's not a sponge, but it is amazing for cleaning the gooie hardened cheese, etc., in between the fork tines and non-stick pots/pans, right? Note my name. I wonder if you could make up a baking soda slurry and keep it in a small trigger bottler for when needed instead of adding the powder. A quick spritz, a little stir and let the heat work. Is it possible?

No. The slurry will separate, in the bottle, at the trigger (will dry out and make/spray clumps) and in the feeder straw, making for uneven consistencies and measurements added to your final recipe and end product. Even in a pro kitchen we do not keep Baking Soda or even Corn Starch slurries just sitting around. They are mixed as needed. But the real question is how much are you using in a day? or, Are you that busy while you are cooking to take 10 seconds to mix and add into the pan?

I have 2 questions about the baking soda and meat technique. 1) would you use for any ground meat (pork, chicken), or only beef? 2) would the technique also work in a recipe such as tacos?

Agreed! Yet I do 'doctor' up my 'Joes by using 2lbs ground beef to one can of Manwhich, and adding to the meat along with the sauce a good drizzle of ketchup, one tbsp sugar, and a few dashes of Louisiana hot sauce: end result is fire!! My father taught me that on our weekend visits as a kid, great memories!! :-)

Now I am really confused. At 14:50 Dan states chewy style cookies are 3 TBLs per cookie. At 18:35 Lan tells us she is using 1 TBLs of cookie dough.

Since Lan's cookie is meant to be frozen I don't think she's using their standard chocolate chip cookie recipe: she added that extra tablespoon of water that made the dough more slack than is typical. Julia goes into an explanation @19:12.

I think in the context, they where lamenting that the only progress the standard recipe was receiving was simply addins instead of Improving on the core. I bet this new recipe would be a great base for the addins you like!

I think you didn't test the best sponge, which is the 3M Ocelo Scrub & Wipe. It will do the job on every kind of dish, pan, and glass with comfort and ease. And, it is the only one I have ever found that melted cheese will come right off of.

Question: What is the best way to DISINFECT the sponges between uses so the bacteria is killed??? I've been placing mine in the dishwasher or microwave it for 2 minutes. Am I doing this wrong??? Thanks for answering, also for all the great testing you do and share!

I also use the dishwasher. If using the microwave, the sponge should be wet, or it might catch on fire. Squeeze out all of the water and allow to air dry or bacteria may form.
