Let's make chile rellenos. I will fill these with cheese, but picadillo or potato is another filling I like. These stuffed poblano peppers are a labor of love and so worth it.

INGREDIENTS
4 poblano peppers
4 large eggs
8 oz Oaxaca cheese
1/2 cup all-purpose flour
1/2 tsp salt
cooking oil for frying
TOMATO BROTH
5 Roma tomatoes
3 cup water
2 cloves garlic
1/4 piece of a small onion
1 Tbsp tomato chicken bouillon powder
1/2 tsp ground cumin
1/4 tsp dried Mexican oregano
1/4 tsp black pepper
salt to taste

I love them but when you order them in restaurants here in Ohio the poblano looks like a deflated balloon on the plate. Not like yours at all.....which is aggravating.

Oh, be still my heart! Chiles rellenos with cheese is one of my absolute favorite dishes. Like you, I also love them stuffed with ground beef. Comfort food at its best!

An easy and free egg separator is your fingers. Simply let the whites run through your fingers and hold yolk in palm, transfer to a separate container.

OM Gosh.....l love chili rellenos. And yours looks so delish. Sure wish l could sample. Not all dishes comes out the same using same exact recipes. lm sure yours is tasty delicious. Thanks for sharing.....l can almost smell them......

These look really delicious!! I grew up in Las Cruces, New Mexico and we always made our rellenos with Hatch Green Chilies and cheddar cheese. Most of the time we’d just roll them up in a tortilla and eat them that way. I love the simple things in life.
