½ tsp Salt
2 Eggs
1¼ Cups | 310ml Milk
2 tbsp Melted Butter + extra for cooking

We make crepes A LOT! My boys absolutely love them! As we are from South Africa, we call them pancakes, but they are the same as your crepes....very thin. We have them with lots of different fillings. We regularly have crepe evenings! Then we start with some kind of savoury filling and end with one or 2 sweet ones! I'll share our fillings with you: *The most traditional in South Africa is cinnamon-sugar that you sprinkle all over the crepe and then roll it like a swiss roll or cigar. For me, I add the lemon juice too! It is just delicious like that! *Caramel/Dulce de leche and banana *Nutella and banana *Caramel with a little whipped cream and n good sprinkle of grated/chopped mint chocolate *Pastry cream with fresh fruit of your choice or even just some cinnamon with that (that is a play on our traditional milktart we make here) *Your favourite preserve with a little whipped cream *Chocolate mousse with fresh strawberries Goodness, the sweet varieties are endless! Savoury fillings : *Mix grated cheese, chopped crispy bacon, finely chopped chives and a little mayonnaise *A creamy chicken & mushroom *Chicken & mayo (add a little curry powder and some finely diced tinned apricots for a lovely different variation) *Savoury mince and then you top it off with a delicious cheese sauce (this one is the favourite at my house) *Tuna, sautéed onion & green pepper mixed with white sauce or cheese sauce *Cream cheese with salmon *Cream cheese with salami/ham - these are ideal for a savoury platter. Roll the crepes tightly and cut in slices. They look beautiful on a platter *use it like you would a tortilla/wrap - it is not as strong though *use the crepes instead of pasta sheets when making a lasagna *you can make wonderfull crepe cakes I hope I have inspired you all to try out Carina's delicious crepes!

Thank you so much for this recipe. Last night I made the batter and this morning I made the crepes. They were so easy to flip although I didn’t get them perfectly round (didn’t make a difference when they were rolled). The taste was so good, there was no craving for sugar (which was perfect as my dad is diabetic). Thank you.

When I was in France, my Aunt took me to one of the best creperies in the town. We had savory crepes which had leaks and scallops in it. They were so divine. Scallops and crepes pair well together because they’re both delicate in flavor and texture. For dessert we had dark chocolate banana crepes. Ugh. So good.

This was so helpful I kept my lap top open in the kitchen to follow the steps. Many, many years ago, my wife and I had a New Year's morning tradition of making crepes using one of those electric pans with a hump in it that you dipped into the batter and then turn back hump up. We would eat them as we watched the Pasadena Rose Parade. But the crepes were very small and not at all like the ones I used to have as a student in Paris in the winter where there was a little dark green, wooden crepe cart at the entrance to the metro I used to get home from my college. Nothing like a hot crepe in the winter as the chill and damp winds blew down the broad boulevards and you have just escaped from the smells of damp wool and garlic combined with the scent of ozone from the electrical currents in the Metro. As a student I could not afford the crepes sprinkled with Grand Marnier but the sugar and lemon blew my socks off. I cannot think of crepes without those and the ones in St. Tropez coming to mind and making me drool. So I needed a recipe that even I, as husband, could make and make bigger without anything electric involved. So this was perfect. I did add a table spoon of vanilla though. I also used half and half (a thin cream) but had to use a bit more since it made the batter thicker. Tastes great though. I did also take Carina's suggestion of making the batter the night before, covering it with plastic wrap and leaving it in the fridge. No lumps and only tore because I had not let the first one cook enough. The rest were perfect. Strange shapes at first but tasted great. My filling was the same concoction I use under my home made sugar free (Zylitol) ice cream. I take a frozen red and black berry medley (available in most supermarkets) and put it in the micro for a minute or so. It not only thaws the berries but creates a berry juice-only syrup in the process. Vanilla ice cream plops on top. So for diabetics or pre-diabetics, you just have the fructose from the berries, not added sugar. So I stuffed the crepes (first one was a disaster since I did not have the heat high enough and tried to turn it too early!) with this mixture, I splashed some squirts little Grand Marinier over it with my thumb covering most of the bottle opening once it was folded into a flat cone and it was yummy! Messy as hell so be sure to wear water proof gear with a slide down the front. I also, on the second one, sprinkled a little Zylitol over the top which gave it that little bit of crunch I remembered from Paris. I also made one of those wooden crepe spreaders to wipe the batter around in a circle to make an even round crepe. Just a 6" bit of 3/4" wood half round trim or fully round dowel with a 5" screw as a handle. Works perfectly and if you bugger it up, just cut off some more of the trim or dowel and make another. I did season it with some Canola oil so the batter would not soak in and like Carina above kept it in a bowl of water so the batter would not dry on it. All in all a great thank you Carina for making our New Year's morning a return to tradition. It will become an instant tradition again. But now I am having ideas for lunch crepes as they serve in Normandy and Brittany. I remember them well with hard cider sitting at an outside table in a village alongside a small river with the rushing water as accompaniment. Those tactile, sensual memories seem to add a dimension to the taste. Not sure why but they do.

I was given a crepe pan for a xmas present about 6 yrs ago, with a great recipe on the back. 1 cup all purpose flour 2 cups milk 3 eggs It says 12 crepes but i discard the first crepe, and still only get 9. Temperature management is the key with crepes. Caramelized bananas with an orange sauce. Yum

I'm using this recipe for my first attempt at making crepes. I've only ever had them with sweet fillings, but they would probably be good with scrambled egg, salsa, avocado and diced raw onion and a bit of sour cream on top (dashes of hot sauce to be pretty.)
