I guess if you're looking for offense you'll find it even in a little recipe video. All the nitpicking about "it's not Hawaiian"...I'm from Hawaii and part Japanese. The explanation at the beginning that "fried chicken in the Hawaiian islands can mean several different styles a lot of them are Japanese inspired". That was a succinct disclaimer. The recipe is simple and delicious.

Problem is calling a recipe something it's not, which is misleading. It's like calling sushi, gimbap. Similar concept, but a different product.

Hot tip: potato starch on Amazon is about $4-6/lb and corn starch is only $1/lb when you buy 3lb or so. I made this recipe for the second time last night but didn't have enough potato starch left from my first purchase so I had to use 1/3 corn starch to have enough. The recipe was just as crispy and delicious. I will try doing a 50/50 mix of corn and potato starches next time and see how it goes. I might even try a mini batch that is more like 1/3 potato and 2/3 corn starch to see if it works well enough.

the problem with corn starch is that it delays proper cooking of the raw chicken.

Mmm, mmm. I've had *_karaage_* in Tokyo, Los Angeles, NYC, Honolulu, you name it...even Mexico City a couple of years ago. It's definitely a delicious simple chicken recipe. 👍

@Kiss Kiss 🤔 Of course not. 😂 How did you come up with that reading my original comment? However, with high quality produce, ingredients, cooking techniques, palate and skills, just about anything can be *_replicated_* (repeat replicated) anywhere especially something as uncomplicated as karaage.

Also, you can mix the potato starch with corn starch 50/50 and still get great results. You will save a couple bucks per batch since potato starch is 4 to 7 times more expensive.

Worked really well. Only part I had an issue with is getting the starch hydrated. Perhaps I need to bring more marinade into the starch mix. In the second batch I sprinkled a little water on the starch and the crunch went to 11. No more white glaze

Just made this for the family (along with the macaroni salad) and it was terrific! Especially for my brother with Celiac's (he didn't get any Mac salad, unfortunately)... Anyways, thanks for this fantastic content. We'll definitely be trying many variations on this one. Cheers y'all!

This is basically a Karaage recipe (Japanese fried chicken) - not bad, except - I’ve found it tastes better without the sugar in the marinade, and instead of water, I add sake or xiaoxing wine…perhaps the sugar is what makes it “Hawaiian-style(?)” 🤷🏻‍♀️ ALWAYS use potato starch, and do a double fry (first at ~325, then a second at 375), not a single fry (but you do you)…fwiw, I’m BOTH Hawaiian and Japanese…😅🎉

I strain it and save it in the refrigerator to reuse later. Once I've fried something in oil, I only use that oil for frying again just in case it picked up any weird flavors that I wouldn't want incorporated into another recipe.

being from the islands, this hawaiian-style chicken looks ono! (delicious). two wonderings i have are: 1. can you use an air fryer? 2. what if you add finely grated daikon radish to the sauce. i think it would add another dimension to the sauce. thank you for sharing

I made this. It is good but I think the next I would forget about frying it and grill it but don’t put the starch on it. I know that is called grill teriyaki chicken.

Potato Flour is actually used more often in Japanese cooking. Potato flour is the ideal for karaage.

This looks/sounds to be delicious. However, I always use bone-in, skin-on chicken ... unless I'm doing kebabs. Would the dredging in the potato starch mixture work with the WHOLE thigh, including the skin? I'd have to adjust the cooking time, but I think I can figure that out. Thanks.

Maybe use a different starch. They said they picked potato starch specifically because it browns quickly. if you're using larger chunks of bone-in chicken, they will take much longer to cook and probably burn the potato starch. edit: maybe if you're sticking to thighs, it's okay...

@@madamerosario I thank you for the suggestion. I'll look into alternative starches, and how they might react with skin. So many recipes call for skinless, boneless chicken, to which I have an aversion. I've successfully worked around recipes/methods before.

I love the skin of the chicken so I also have to find a way to use it. Bone in protein is always juicer to me and I don't like dark meat chicken or turkey so its wings or breast for me.

Hi Susan. I had the same thought. I paused when he finished dredging and if you remember, he cut the thighs in half. It looks like it's 6 whole thighs so I would say 6-8 thighs cut in half(maybe more) since he still had a lot of starch mixture left over. I don't think pounds has anything to do with it. Hope this helps.

I tried this recipe tonight for dinner and my wife and I thought the acidic dipping sauce was gross. It tastes like rice vinegar only. The chicken itself was crispy and tasty but I would not make it again.

Potato starch is ideal but you can use cornstarch, flour, or a mixture of the two.

Right. Why are they calling this "Hawaiian style"? It's a Japanese method that we have in Hawaii but its not even more popular than katsu or even regular fried chicken here.

To anyone who knows better, it is clearly Japanese. As are the other two he mentioned, Mochiko and Katsu styles, all Japanese. True Hawaiian food does not include any fried chicken. Since so many people from other countries have immigrated to Hawaii, their popular foods have become part of the popular culinary fare that people might find and enjoy while on Hawaii. Just as Korean fried chicken is very popular in Hawaii, California, Washington DC, etc., that does not make any of them Hawaiian foods. Stop misrepresenting Hawaii and others of foreign heritage that call Hawaii their place of residence. Enjoy the foods but know the origins of what you are eating. That will also give you a clue if it might not fit your dietary needs.

Why is the frying oil at such a high temperature? I was taught how to cook fried chicken from my mother and grandmother. I have had fried chicken convos with many different people that also come from families where fried chicken was a big dea;. There are always differences in recipes, but we all aggreed that the frying oil needs to be around 300 F NOT 350-375 F. That's way too hot! the chicken in the videos always looks great but i dont think it can be recreated in a home kitchen enviroment.
