If you've ever been to Miami, you know about Cuban's liquid gold, espumita, which is what makes our Cuban Coffee so darn good!
In this episode, Ernie shares the way to make the perfect Cuban coffee, aka cafecito, at home using a Moka pot (no additional equipment required).
The beauty of cafecito is that you only need one ounce to get that mega caffeine kick! If you want to share with friends, you order or make a colada, which serves 6-10 people. Using a Moka pot, you automatically make a colada and then can use the left over coffee later for drinks like cafe con leche and/or cortadito. Ernie shares how to make those too.
Cortadito is equal parts milk to espresso. This drink works well with any milk alternative, but is typically served using whole milk, and for an extra special treat, we like to add or substitute evaporated milk. Remember, what makes it Cuban is making espumita for your espresso before adding it to your milk.
Cafe con leche is much like a latte. Only, Cuban coffee with espumita is made using sugar, so you have an extra kick of sweetness. Just like the cortadito, any milk substitute can work, but it is best served with whole milk or diluted evaporated milk for the most authentic experience. There is a SECRET ingredient that helps make THE BEST cafe con leche, see if you catch it, only pros know to add it when served at a cafeteria.

Was in Key West this past weekend and ordered a colada...and I drank the entire thing alone. It was sooooo good, but I thought my heart was going to beat out of my chest! The best thing during the heat of the day was a large cafe con leche over ice!

actually italians do espumita (we call it spuma) as well, but it’s more like a special occasion thing if that makes sense. my mom would do it once in a while. she wouldn’t pack the coffee as italians don’t do that (no shade here- i love cafecito and understand the difference 😊), but made spuma to sweeten her coffee rather than just adding sugar to the finished cup. thank you for the video! very informative. edit to add- my mom also did it with the first few drops of coffee ❤

Bingo…..the first drips that come out are the strongest. They just went through those fresh coffee grounds. The last part that comes out is weaker because the first water extracted a lot from the grounds.

Weekdays I drink coffeemaker drip coffee....usually dark roast w medium grind... On the weekend I make a BIG cortadito! I have a 4cup Bialetti...I make the whole pot...do the whipped sugar mix (abt 3tsp)...and do a 1:1 with boiled milk (actually half&half when I have it)....it's the absolute best coffee this Puerto Rican makes at home. However, I have fond memories of my Abuelita's cafe con leche....using a colador. ❤️❤️❤️

I haven’t tried to make Cuban coffee just yet but I’ve been wanting to since a colleague who was from Miami made it for me. I recently bought a moka pot and have only been doing espresso or coffee with it but I’ve watched a couple of videos on making Cuban coffee (your video is by far the best) but I just wanted to say that the instructions that came with my moka pot said to fill it with coffee but definitely NOT tamp it. If I hadn’t read the instructions I would have tamped as I’m used to making espresso in a typical modest home espresso machine. Other than that, your instructions are great, thank you!

You do have to tamp it down a bit - definitely not like espresso, but lightly packed, it will make a great cup. You'll have to experiment a little to find what works best for you.

That looks and sounds wonderful! The closest I've had is Turkish coffee, which I love. I usually use a press to make my daily coffee, though, for ease and convenience.

THAT was beautiful!!! Drank authentic Turkish coffee, drank Puerto Rico coffee, even went to a "coffee house" to have Cuban coffee. Watching you, I now do not believe that I had authentic Cuban coffee. Only disagreement I have, I cannot SMELL

Agreed. I used to drink cafe con leche as a child but now it's just way too much milk. The one to one ratio gives you the warm, creaminess without being too much.

So enjoyed this video, the great information/instruction and your presentation, especially. Until now, these distinctions in coffee servings had escaped me. In my well-loved Bialetti Moka pot, there is a tiny, nondescript waterline marked just below the valve in the lower chamber. I find that helpful, as well, but your suggestion of using the valve as a marker works--it's a lot easier to see. :-D Felicidades.

So sorry for such a delayed response. Try to stop at any ventanita for a great cafecito. Our favorite would probably Casavana in Miami Lakes. The busier the place, the better because you know it's fresh. There are even some grocery stores here with cafecito counters (Publix Sabor on West 12th Ave and 68th street is my personal favorite).

At 7:21 , Lactoderm = milk skin, it's exactly what I was thinking when he was struggling to find a name for it. Kind of like pudding skin, that thick dried out layer you get when pudding has a chance to "dry out" in the fridge. Yep, I agree , milk skin is gross! I really enjoyed the video, I am going to try out these recipes, thanks.

I'd like to try this. The best coffee I ever had was Greek coffee at a restaurant. The waiter cautioned me not to drink the wet grounds at the bottom of the cup 😊

Great video! Question: when making the cortadito and cafe con leche, do you start with the sweetened coffee you made in the beginning? As in, do these drinks contain sugar? Thank you!

yes. you pour a cafecito from the colada. the coffee used for cafe con leche and a cortadito comes from the colada also.

Over tightening will cause the gasket to pinch then leak... just firm is where its at 👌🏽

I have had authentic Turkish coffee, had Puerto Rican coffee, even went to a coffee house to have Cuban coffee. Watching you, I do not believe that I have had authentic Cuban coffee. Looks delicious. Only disagreement is that I cannot SMELL that wonderful brew.

I lived in a place that had one of those stoves and I stopped making coffee in my Moka pots because it was frustrating. I'm glad I'm back to a gas stove. It's the only way.

Good vid. TY Weird that you said it's 2 parts coffee and 1 part milk, but then you said it's 1 to 1. I guess the secret is just make it to your preference! I'm also glad that you packed the grounds so tight. I do that and people get mad.

Joel, as far as I understand, boiling the water first is solely to save money in areas where electricity is cheaper than gas.

although to be honest, james hoffmann did some testing, and using boiling water def helps reduce bitterness and harsh flavors. take that as you will :)

Over tightening like that only destroys the gasket sooner. Just a moment after you feel resistance from the rubber is all you need. The valve is there to release pressure in an emergency, for instance if your coffee is packed in so tight that the water isn't passing through. The risk of covering the valve and over packing the coffee puck is that the unit may explode.
