How to make dandelion honey/jam

Honey/syrup/jam/jelly... whatever you call it, this is vegan friendly and tastes EXACTLY like the real thing so give this dandelion honey a try. I made this dandelion honey and it was so tasty and mild. Friends and family were so surprised and love it. I am in Ontario, Canada and will certainly be making plenty for canning. Thank you so much Rose!

Fantastic video everyone 💪, we don’t tend to have a lot of dandelions 🌼 in our yard not by design we just don’t. But, the blueberry farms around here leave loads and loads of them in their fields to attract hundreds of bees 🐝🐝🐝🐝 it’s quite lovely to see. Have a super week ❤❤, Ali 🌥️🇨🇦

Ah thank you Ali. The blueberry farms sound wonderful. I do start getting twitchy when the lawn is so long and full of weeds but it is nice to see the bees 🥰 Fortunately, there's plenty of food for them here, now (and a few dandelions I haven't got up from the patio) Rose blew all the clocks in the garden yesterday so they'll be back soon enough! oooooh, this is what I picked Dandelions for this year! 💜🎉 I was *really* close to this recipe, up to the point I got stuck … and I think you explained what I needed to know! 😂👍 I was trying to sort out an American recipe, with less sugar, but more Pectin. 😮 Your version makes more sense to me! ( and I have leftovers to play with ) Yep, there is *way* more sugar in this than I had expected, but that is the secret! 😅 Thanks!

Well done on a very relaxing video Karen. Never heard of Dandelion honey,Definitely a good one for helping with local hayfever allergies. Thank you. Well done to the volunteer tasters. You could see by Roses face, the minute she are your honey, she knew it was it,bless her. Well done being so conscious of where you got the dandelions,good resources.

@rosesallotmentadventures9365 I just received a honeycomb candle and local honey just today as a present. Was thrilled as I know its naturally a good help with mine with allergies. I presume with yours can use as a sweetener too in hot drinks etc. Again thankyou, I never heard of this before. Looks so simple. They were superb to take part in the test.

Is there an alternative to sugar? Maybe stevia or etherotol?

I wouldn't use it myself but you could experiment? I think maybe syevia would be too overpowering in sweetness and taste with the quantity you'd need to get the right consistency, but I've never made a syrup with it. If you have a play around, do come back and let me know how you got on, please 😊

How do you keep your dandelion honey from crystallizing

It can eventually crystallise, ours started to once opened after a good few months of being opened. You can avoid this by using small jars and hence using up the honey before it has a chance to crystallise or, as I did, stand the jar which had started to crystallise, in hot water. I will say that after about 6 months of being open, the only crystallisation is at the thin layer around the edge at the top, not in the bulk of the honey. This product crystallises a lot less than bees honey
