I'm 74 years old now and I've been making wine every year for the last fifteen years, and I've never made date wine, but when I first started making wine I read all kinds of articles by winemakers around the world, and the consensus among most of them is that if you're going to make wine out of watermelon, strawberries, or persimmons, you may as well go ahead and make it out of sugar water because the end result will taste about the same. Seeing as how ripe persimmons and dates have a similar taste, I can well imagine they'd say the same about date wine.

@@Spectacular-cuoredicioccolato ~ There are a few things I've learned about winemaking that I recommend to any winemaker, some of which I learned from seasoned winemakers, and some of which I learned by making mistakes. The first thing I recommend is that the bigger the batch the better the wine turns out. I always try to make it a point to accumulate enough fruit in my freezer to make a five gallon batch. As far as I know, the consensus among most of the gurus is that making a one gallon batch is a waste of time. Another thing I recommend is to never boil any fruit, or to pour boiling water over it because the wine won't clear. Another thing I recommend is to never puree fruit in a blender because the wine won't clear. The way I do berries (elderberries, blackberries, blueberries et al) is to add two cups of water and two cups of berries to the blender and pulse grind them just enough to break the skins, and repeat the process until the brew bucket is up to the two and a half gallon mark. Then add the required amounts of sugar and water to bring the alcohol content up to 13%. I also like to bring the level of the water up to the six gallon mark so that after I strain out the pulp (six or seven days later during which time I stir the must every other day) there will be close to five gallons of wine left. Then I transfer the wine from the brew bucket to a five gallon carboy and rack the wine after sixty days, then again every ninety days until it's eight or nine months old and is clear. I grind the larger fruits (pears, apples, grapes, muscadines, tomatoes, plums, figs, et al) in a big meat grinder (#32 that you can get at Harbor Freight) with the biggest open blade. The reason I do it that way is because if you grind the fruit too small the wine won't clear. The reason I recommend bringing the alcohol content up to 13% is because that's a high enough alcohol content to preserve the wine so you don't have to add sulfites or sorbates to it at the end (which are chemicals that won't do you any good and will give you a hangover). I also use twice the pectic enzyme the recipes call for because it really helps the wine to clear. Happy winemaking! Cheers! :O)

i notice that you don't do second fermentation or clarifying/filtering the wine. won't this leave some yeast at the bottom of the bottles ?

Hi, this is a good recipe, but i have| a few questions, so do we cook the dates and the raisens for 4 hours? Or do we bring the water to boil,add the dates and raisens and turn the heat off, and then leave it for four hours? Also can i use crushed grapes as my yeast culture as in Namibia i cannot find the right yeast for this wine? I you could advise please,thank you in advance.

Was thinking if investing in a pressure cooker might help you with the first stage of the recipe, it would cut down on the cooking time quite drastically and also save energy costs. Have a look on eBay you can purchase one without having to break the bank.

Greetings from Mumbai, India Saw your videos and that inspired me to start making wine, got a few necessary things like fermenters, sp gr meter and auto syphon etc. Tough getting some things here, they are very difficult or extremely costly, so had to improvise. Did the Banana and pineapple which was a hit with friends and family, in fact did two batches of the Banana. It did not go as clear as urs but the taste was awesome, had to back sweeten it though as it went completely dry. Just racked the date wine a few days ago, did a few changes as I wanted a higher abv and it has cleared well and it went from 1100 to 990 apprx 14.6abv and tasted very dry so I back sweeten it a bit tastes spec-ta-cular Thanks a lot for u r videos they are simple and to the point and make it look so simple. Keep up the good work looking forward to a gr8 year of brewing ahead.

Hey I never tasted/drank wine. I soaked dry dates overnight (2 dry dates in a small cup of water) and drank the water next day, it was sweet and slightly sour, does wine taste the same?

I was thinking in the similar lines. Wine from date jaggery. I'm going to travel to west bengal this coming Feb. If the traditional sweets filled with this jaggery tastes spectacular, just imagine the taste of its wine. 👍
