I came from a family where everybody worked. So, I didn't experience canning growing up. But, when I got married my mother-in-law canned a lot! With 5 kids, she had to be resourceful. She bought a pressure canner to speed up the process. But, all us girls would talk, laugh and talk and laugh some more! None of us were checking on the canner until it was too late. It took us 4 girls 2 hours to clean the green beans off and out of everything! We never found the pressure gauge because it blew off and embedded itself into the ceiling! 😳

Oh my!!!! I've been pretty lucky with pressure canning so far. I'm looking forward to when my grandkids can do canning with me.

My Grandson likes me to fry them. That's what he thinks of at the first sight 😅. We make wild violet jelly too.

Buttercup or dandelion under your chin, if it reflects yellow you love butter! (If you put a pat of butter in the pot is really reduces foaming).

Yes! I remenber doing that as a kid . Putting the buttercup under my chin and my sister would look for the reflection. If there was yellow under your chin you loved butter! 😂 😂

I have put extra dandelion tea in the freezer for later use. Violet jelly is wonderful too....made the same way

I am so trying this! If you have not tried making salve from dandelions yet it’s so worth it as well! It’s great for sore feet!

I definitely want to try medicinal uses as well. That's what I was hoping to use the dandelions I freeze dried last year for but didn't have time. There are so many "Weeds" that can be used for culinary uses as well as medicinal period. There's so much to learn.

I watched my mother and grandmother can, but I didn't start until about 62, so y'all know that it is never too late to learn something new. I'll have to try the dandelion and violet jelly next spring. God bless y'all and keep growing!

It's definitely never too late to learn new things. We've learned a ton of new things since buying the farm 5 years ago. It keeps life interesting. I'm trying to decide if I should try violet this year or wait until next year. (it's more about whether I have time....)

I made this yesterday and this morning it is still liquid. After watching your video, I think I didn't get it to the hard rolling boil. Can I reprocess and see if it gels up?

Unfortunately, I'm not extremely experienced using pectin. I re-processed a batch of mixed berry jam once using the instructions from this website. It would be worth a shot. I've also used one batch of blackberry jam that didn't set as syrup. Dandelion syrup on pancakes sounds yummy. foodinjars.com/blog/canning-101-how-to-save-runny-jam/

Hold a buttercup under your chin, if it reflects yellow it means yes. Over time, paraffin wax shrinks and expands with temperature changes leaving the jam and jelly susceptible to growth of molds and yeasts.

Yeah, it seems like there's no way paraffin could be safe. I think the generations before us did all kinds of un-safe things. Thanks for watching!

Where I come from (NC) if you put a buttercup under your chin and can see a yellow reflection on your skin from the flower, then your "sweet". 😂showing my age I guess

When I was younger, if you held a buttercup an inch below your chin, if your chin turned yellow, you like butter. Usually, the sun was out, and that was a reflection on your chin.

Most people have no idea how much dandelion nectar is in their honey! Bees are just coming out of their hives when dandelions bloom. Dandelions have a huge supply of nectar and they are the first blooms so you could say it's bee breakfast food. That means all the honey from your hives are flavored mostly from dandelion nectar. It's not that dandelions taste like honey, it's that honey tastes like dandelions! Please plant some dandelions at the base of your hives. People need to stop treating dandelions like weeds. They are important for insects, animals and people. Dandelions boost our immune system and is very high in vitamin C and D.

Dandelion is a treasure that people don't appreciate. We have a few large areas with native flowers and dandelions. The bees definitely love the dandelions. I guess it's true yay spring honey would taste like dandelion. Around here the honey locusts bloom about the same time as the dandelion so the bees have a nice early smorgasbord.

Depends on the area, dandelions and creeping charlie, look alikes dead nettle and hen bit is real popular around me for the bees and butterflies, I am so lucky that I live at an end road, and the neighbors do not spray in this end, other side different story😢💔

Paraffin is recommended anymore because it can shrink or expand and leave your jam or jelly susceptible to mold or yeasts

Yeah, I wouldn't think it would be safe. I had forgotten about my Aunt doing that until Donny mentioned it. We know a lot more about safety now.
