Follow our step-by-step guide to roast eggplants for that authentic smoky flavor and prepare this classic Mediterranean dip in two ways: with tahini and with mayonnaise. This flavorful dip is perfect for any occasion and goes great with fresh bread or as part of a mezze platter.
👩🏼🍳 Baba Ganoush:
2 Eggplants
4-6 Tbsp raw Tahini. - OR - 3-4 Tbsp mayonnaise
4 garlic cloves, crushed
1/2 lemon, juiced
1/2 cup parsley, chopped (optional)
1/2 tsp salt
Pinch of White pepper (optional)
Paprika, for garnish
🔷 Roast the eggplants:
Options 1: Preheat your oven to 475º Fahrenheit, and roast for 40-45 minutes, turning every 10 minutes, until the eggplants are chard and completely soft.
Option 2: Place the eggplants in a stovetop roasting pan on high heat. Turn every few minutes and roast until soft and chard.
🔷 Place in a bowl, and let the eggplants cool until it’s safe to handle.
🔷 Cut in the middle and remove all the flesh. If you find a stubborn cluster of seeds, remove them and toss them. Place the flesh in a small colander to remove some of the liquids.
🔷 All the ingredients with either the tahini or the mayonnaise. If using tahini, you may want to add a bit of water to the tahini before mixing it so it’s not as thick. You can add just a little and then work your way up after mixing.
🔷 Mix well and crush with a fork. Taste and add more salt, lemon, and garlic if needed. Remember-it all depends on the size of the eggplants.
🔷 If you’d like, add chopped parsley and garnish with paprika just before serving.
