Chef Shima prepares a delicious African Classic, Egusi Soup with Fufu. This soup is native to West Africa nations. Egusi is a soup or stew thickened with ground Eguis seeds and enriched with assorted meats, vegetables, seafood and spices. Chef Shima will be preparing a Nigeria recipe using the fry method. It is a great soup for those who like to try something different. Ground Egusi seeds give this soup a unique color and flavor. The chef used smoked catfish, goat and beef. Let's check out the process.

Hi, Chef Shima! This egusi soup looks really good! I have never seen smoked catfish before, and I was surprised that the palm oil was read. I am not sure why, but I was expecting it to be a different color. Very interesting. Very interesting that egusi is made out of pumpkin seeds. I have never had fufu, but I am sure it would be the perfect way to eat this soup. Thanks for sharing!
