How to Make Fig Wine - Using Dried Figs.

Figs have such interesting flavors, and lots of cultures have used them for millennia. Also, the idea of a wine made with fig and honey just sounds pretty amazing. So, we set out to concoct a recipe to make a fig wine!
Ingredients:
2 pounds (.91 kg) Dried Figs
1/2 pound (227 grams) Raisins
Zest of one Lemon
Juice of one Lemon
1 pound (454 grams) Wildflower Honey (thanks Derek Skinner!)
Steeped Black Tea
Lalvin 71B yeast
Water to appropriate Head Space

The last time I fermented in these I did something different for an air lock. So the Airlock that comes with it uses too much sanitizer\ vodka. Also I started out warm, so I expected negative pressure and did not want ot suck anything back in. I also was expecting a strong fermentation. I filled the reservoir with Sanitizer, took a piece of cheese cloth soaked it in the sanitizer and draped that over the whole ensuring it draped into the liquid, Capillary should keep the cloth wet. i also used the factory cap and put that on top to push the cloth into the sanitizer. This still formed that submerged lip. It worked wonderful. The cloth stayed wet, nothing could get through the wet cloth with out going through the sanitizer.

The smell is something I had early on. And I grew to like it, it smelled like cinnamon rolls without cinnamon and with fruit that went bad... It's filled with vitamin B12, so it makes you happy... So happiness on top of happiness, it's the best!

When ever I'm using a measuring cup I noticed when ever you go slow is spills. You just have to commit and pour it quickly... But it does look like an interesting brew

I work in paint manufacturing and regularly have to pour 5 gallon batches through a filter bag with a 3 inch diameter opening. Every time I line up the 5 gallon bucket I'm pouring from over the filter I say "And...commit," and just pour it. The liquid you're pouring wants to cling to the surface of the container it's in, but you can stop it with momentum by pouring it too quickly for the liquid to cling. It's very counterintuitive, but committing and pouring quickly causes much less mess than pouring slowly.

@@patlawson1659 Pouring quickly does not inherently cause oxygenation. Oxygenation does not inherently mean your brew will turn to vinegar. You can pour quickly onto the inside wall of the receiving vessel, minimizing oxygenation and only off-gassing carbon dioxide. You can also have an alcohol content greater than the bacteria necessary for the creation of vinegar can survive. Either way, I'd rather have a batch of fancy vinegar in a vessel than a mess on the table, floor, myself, etc.

It’s best not to pour since oxidation can happen. No matter how careful you are, siphoning is still safer.

I made a gallon of Sassafras Mead and a gallon of Sassafras Wine. Fermented and sit for 2 months. Tasted for the first time. OMG!!!! Amazing....... I call it Root Beer with a kick..... 16%

Awesome! Another one for my need-to-make list! I guess I’ll just have to rinse raisins as I can only get the ones coated in oil… and I need to wait for one of my fermenters to free up. About the smell of fermentation: never had any issues. And I’m the type of person that can smell what my parents’ neighbours cooked the day before when I go over for a visit. There.s a whole garden between the two houses.

As far as the smell in the house issue, We smell it after we have been out of the house at work and first come home. Ours is not a bad smell, it just smells a bit like an open glass of mead...or like a slight bread yeast smell. Its funny when friends come over and notice the smell. They get excited because they smell it and know they will be getting a bottle of mead soon!! lol!

Really wanted to thank you for this video. My wife was gifted a large quantity of dried figs a while ago, so I planned to make some dry dried fig wine for my next brew. I was not sure what other ingredients to add to balance out the flavor, but with the help of your experience, I now know what direction to take. Love you videos.

You answered my question about the odd smell! It may be stressed yeast... the ones that smelled awful (not sulfurous) had little to no fruit to them, or no nitrogen. I either need to get used to adding in fruit for that reason or start using a yeast nutrient. THANKS!

Never thought about making a fig mead/wine. Although I have to say, my strawberry and hibiscus cider does have a "fig roll" type tase to it.

Re smelly brews, I've found grape ferments tend to be stinky. They seem to offgas a lot of sulfur compounds and remind me of the smell of my highschool biology lab. I haven't experienced the dreaded hydrogen sulfide, but I've found good aeration, good nutrient, and fermenting grape in the garage all help with the smell. Ok, the last one helps the most 😁

I just bought a couple of those Little Big Mouth fermenters. If you put that plastic lid on, I think you are supposed to fill the inset section of the lid with sanitizer solution to use as an airlock

Only time I had a strong smell from a brew was my 6 gallon batch of apricot wine. It wasn’t an unpleasant smell (it smelled like a young fruit wine) but it made the whole house smell. Felt like you could get drunk on the fumes every time I opened the door to the room housing the wine.

I just made a one gallon batch of your beginner mead. And I thought, why not make another? I have a second 1 gallon fermenter. But of course I had to make variation on the theme, and happened to have some dried fig pieces and substituted them for the raisins in your recipe. I also used one diced mandarin orange and used Fleischman's bread yeast. Sorry, so sp. Gr. to share (my hydrometer is in shipment from Amazon). So I'm anxiously awaiting the next couple of videos to see how yours turned out.

'Only real man use Laydels. pretty sure this one is going to come out great, I wish you guys would have done a medicinal mushroom metheglyn before I try one from scratch. truly appreciate you guys doing things first and helping us adjust, improve or completely copy your ideas. thank you as always. Im also about to find out if rare Bananas make a difference. also got a cherimoya Jam wine tasting in a few weeks. my last mead was decent not great so Im waiting 6 months to try it again. and I guess I learned the hard way that French Oak re used doesn't have the same wonderful effect that it did on that first mead. this maybe common sense to some of you guys but it wasn't to me until now. lol

Microwave your lemon for 30sec-1min before jucing. makes it a lot easier to extract a lot more juice.

You can use a flexible cutting board as a big funnel for your big mouth fermenter to help with the splashing.

Hello Brian and Derica, I have been following your videos and decided to give it a try at homemade brewing and do my own meads and Hydromels. I bought all the necessary materials to start a basic mead, bought real honey (from a beekeeper) and used bottled water, then, for the batch, I used 2.2kg (4.85lbs) of honey to 5L(1.32US Gallon) of water, aswell as, Browin Enovini Honey(~16%ABV). Mixed everything into a fermenting bucket and placed an airlock and let it sit, so far so good, I smell the airlock and it smells like mead :) The thing is that after 12 days, I decided to be naughty and opened the faucet(embedded into the bucket) and tasted a bit of that must... it was still liquid, with a colour similar to that of a hydromel and I could only taste the alchool and my mouth kept burning for a while. Did I do something wrong(besides not doing a gravity reading as I didn't have an Hydrometer(I do now))? Is it possible that it went completely dry in such a short amout of time? Or is it perfectely normal and it will "come together" with time?

Fresh figs are one of the few fruits with a higher sugar content than wine grapes. Dates and jackfruit are the others. Dried figs can be as high as 60% sugar by weight depending on the type. Their draw back is juicing/extracting compared to grapes.

Dates are historic fruit as well. In fact, the Judean date (which was thought to be extinct) has, in the last decade, been brought back to life through the efforts of agricultural scientists in Israel. A 2000 year old date pit found at Masada in Israel, was incredibly sprouted. It was a male judean date palm. Subsequently, a few other of the ancient pits were sprouted and found to be female. Pollinated by the male judean date palm, it recently produced the first judean dates in 2000 years.

I would be curious to see a date Meade/wine with thyme infused honey. I have used dates to infused vodka and gotten something close to a liquor, without adding sugar. It make a surprisingly good manhattan.

Ironically this came out today, I just started two fig meads on Wednesday. When you did your oak video I had just parked some mead as well(I plan on putting one on oak.). I used orange peal instead of lemon and no raisins, with 71b yeast. However, I did not put my figs in hot water. Should I be worried? They were organic sun-dried Costco bought figs. What should I be looking out for if something does go bad. So far in the 25ish batches I’ve made since last November (following all your knowledge) I have not had any go bad on me.

Quick question. I'm thinking of starting a tea mead and was thinking of using the Tavos brand and I checked the ingredients and didn't see any preservatives or oils but it does have "Citic acid" and idk if that's okay to use.

Yes Trbos anttimation back with the jazz hand noise. Lol. I have a big bag of dried fig bits. They look and taste like fig newton filling not traditional dried figs. Will it work if I just used that.. I was thinking brown sugar or raw cane sugar.

Fig wine clears readily. Usually ends at a higher abv.

Did you chop or cut the dried figs, so that the yeasty beasties could get at the awesomeness of the figs? I just ordered the Todd from AMAZON from your link. Could you have put the fig-raisin-lemon peel mixture into the Little Big Mouth fermentor first, then the boiling hot water, and let it steep in the fermentor before mixing in the honey and yeast? The brew bag has saved me a lot of mess when it is time to take ingredients out of the primary fermentation.

Yes, I can comment from experience that the pith adds bitterness. I remove it when I make a tea or tincture.

I'm looking into make a fig newton mead. I'm finding that the dried figs I come across contain potassium sorbate as a preservative. Did your dried figs contain potassium sorbate? If so, was it in a small enough quantity that it didn't effect fermentation? Or, did you somehow remove the potassium sorbate (and if so, how)? I love the videos and I'm learning so much from them!

Most dried fruit has some. Sometimes it’s not much and you can push right past it.

I am very new to this, only just started my first mead and was actually looking for a fig wine recipe for ages (so glad you made this video). Is the process after all of this the same as for general mead making? Letting it ferment until it stops bubbling, racking and then bottling etc?

yep for the most part that's the game for all but beer as I have seen thus far remember to get readings a few weeks apart before you rack to be sure its done

We can, but to get tannins, black tea works best. If you want something with a green tea flavor, then you can certainly use that. Green tea tends to be more subtle so you'd need a lot of it.

i wonder what the difference using fresh, non dried figs would be .. defiantly the flavor would change ... but i wonder if the sugar content is any different

I'd like to try this but with the frozen figs from my own fig tree. Is there a reason dry figs were used other than "that's what we had on hand/could get in the store"? Would there be any difference in the recipe if fresh/frozen figs were used instead of rehydrated dry figs?

I've found lots of differing info on this but the average seems to be that a dried fig weighs about 1/4 of a fresh fig. So if their recipe says 2 pounds dried, that would be 8 lbs fresh. But it could be 5 to 10 lbs or more. I know that's quite a spread. Other recipes I've found say that for a gallon of wine you want 2.5 to 4 pounds of FRESH figs. So who the heck knows

I have a question? Do you think pure cranberry juice has to high of an antimicrobial property to brew mead with. I made a 1 gallon batch and 3 days later still has not started to ferment. I used 64 oz of pure juice 2.75lbs honey and 14 oz of dried cranberries. SABV was 1.158. I let it go for 2 day with no activity. So I moved it into a 2 gallon fermentation bucket and added half a gallon of water with 8oz of honey to drop the abv a bit and to dilute the juice a bit. I've waited 24 hrs and still nothing. I'm thinking I just went a bit to far with the pure juice. What are your thoughts.

Ph might be too acidic, I got a couple of those cheap Ph strips (0-14 range and 2.8-4.4). Can also test your sanitizer to make sure it’s around 3 and your Must to make sure it’s not too low (acidic). Rough targets are: White Wines 3.3 Red Wines 3.4 Sweet Wines 3.4 Dessert Wines 3.6 Also check ingredients to see if your juice contained any preservatives (which are bacteria and yeast killers/suppression). High gravity like 1.15 can inhibit yeast. You can “step feed” where you start with a lower gravity and add honey in one or more additions. And one last thing you can do is build a yeast starter for 24 hours with some diluted Must so you have a healthy & large yeast colony already built up and past the “lag” phase. And one more complex thing you can do with a Must high in Malic acid is use a bacterial culture for Malolactic fermentation to cut the overall Ph. Hope that helps

@@DarkStar666 Thank you so much for your help. I was also thinking along the lines of ph as well. Being a gardener I understand how even a few points of ph can after things in a great way. I decided to add 1 gallon of water with 1 lb of honey mixed in. Split it between a 1 gallon carboy and the brew bucket and 18 hours later both airlocks are bubbling. New mix abv is 1.090 this I am happy with.

One of the recipes in the back of my Nutribullet for a Fruitful Salad claims this particular medley of fruit contains nutrients linked to increase libido heatrtier; umm... well figure it out; for men. 1 cup of grapes, 6 figs, 1/2 cup pomegranate seeds, 1/2 tbsp of honey and 1 tbsp of fresh lemon juice.

Of course I don't buy into that any more than Redbull will give you wings. I'll stick to drinking coffee/ tea, eat the recommended servings of of fruits/ vegetables and stay away from all energy drinks, because it's all poison.

i just started making my first batch of 1 gallon of mead the OG was 1.092 and after 4 weeks it's 1.020 and still bubbling is this normal?

I couldn't stand it anymore, after watching it Blow off 🌋 for 3 Days and Bubbling like mad for the next 3 , I took it out to the block building , ( an old store ) set it on an old oak desk . Started looking at the gallon of blow off liquid . Then I remembered y'all saying , ( don't throw it out, text us, we'll tell ya what to do ) . Well , I started thinking , there is probably some stuff in the gallon Blow off jug that the 5 gallon fermenter can use . Since it was so young, 6 Days . So I racked as much as I thought safe into the 5 gallon fermenter . That Was A Good Thing . It was still Bubbling out the Airlock , but when I added the gallon of blow off liquid , it got bubbles running up the sides of the glass jug just like the first 3 days , except it wasn't Boiling out the top . It's on the cutting edge, but it's holding . Now I don't have to worry about what to do with the gallon of Blow off 🌋 liquid . And it's outside . 🤠

Not yet! However if our fig trees ever get to producing fruit then we will certainly be brewing with fresh figs.

Hey guys. I need some help. On 8-1-21 I started a cran-apple wine using one gallon juice, 3 cups sugar, and 1 pack of 71B yeast. Starting gravity 1.116. It is now 9-13-21 and the wine is still active. Gravity 1.065 which is 6.69 abv. The taste is very sweet with a hint of alcohol. All the wines I’ve made in the past usually goes to about 12% abv. Everything was sanitized. It did take about 4 days before it started fermentation. Can you give me some idea why it’s taking so long? Thanks in advance.

Cranberry can sometimes slow fermentation due to antibiotic properties, just let it keep gong.
