I made this yesterday for the first time. My eggs didn't get so much air but it rose well. I usually fluff cold egg white. I think this is more moist and I like the flavor. Thank you.

Julien, in a recipe such as this what purpose does the corn flour serve? Should those of us abroad (America) be using corn STARCH? Is the corn starch/flour's purpose strictly to thicken the batter, or are you also adding additional sweetness from the sugar in the corn flour? If we are not using corn flour/starch, should we increase the amount of caster sugar?

Corn flour is the same as corn starch , it doesn't sweet up things , but help to create a genoise much lighter

@@julienpicamil Thank you for clarifying! In the recipes that I have made, corn flour is usually much more course; you might refer to it as a corn meal. I was trying to figure out why we would want corn meal in a cake!

I knew this work perfectly because I had tried this. However, my mom's birthday is coming and I just have cake flour left and all the nearby supermarkets are closed. So can we use cake flour instead?

The mix of plain flour and corn flour (in Europe) is the equivalent of cake flour. You essentially diy cake flour by: removing 2 tbs from 1 cup AP flour and replacing it with the same amount of corn starch (corn flour is what it's called in England and parts of Europe). I hope this helps somebody, since it's been 3 months since you posted this question. Sorry no one responded sooner. 😕

I saw what you meant, a little blue light "flying" from under the cake as it goes into the oven, from left to right, then disappears after the oven door is closed. I think it's just a light being reflected because the door is opened, not a fairy. Funny, though.

Cake flour is much lighter than All purpose flour and has 6% protein content as opposed to 10%. It is commonly used for lighter baked goods like Genoise sponge.

Its not French..,Its Italian . You are French so you should know that Genoise means from the city of Genoa Italy where it originated.
