I'm a single lady (69 years of age). Therefore, I will cut the recipe in thirds (6 eggs ÷ 3 = 2 eggs, etc.). I'm making chicken noodle soup (the New York Times cooking editor suggested it for today~New Year's Eve), and this is my first attempt at making homemade noodles, ever. I have to now make all these things I used to buy in the grocery store, bread, noodles, etc., from scratch, as I recently discovered I'm 'Gluten Sensitive'. It is an immense blessing for you to share your gluten-free culinary expertise with us folks here on KZfaq. Mine was a lot stickier and much more fragile. No way I could handle it like that. I rolled it on parchment paper to carry it to the drying table.

how long do you cook your ravioli for? and if you make fresh noodles how long would you cook them for?

For fresh noodles I just cook them until they float... Maybe spaghetti is like a minute or two? If it's very fresh. Ravioli has probably two to three minutes?

another question, i made this dough, rolled out by hand perfectly but when i tried to use my pasta roller it crumbled on the biggest setting what did i do wrong?

I find the first couple of passes It does tend to crumble, and the more you do it then the smoother gets. But you can also add a little bit extra binder if you want (aquafaba, water, egg white) If you wish

Better Batter - gluten free and allergy friendly! Do you have any suggestions for Potato-free/Nightshade-free flour? I’ve got a Nightshade allergy that I discovered while first going gluten-free. Potatoes are in nearly every gluten-free food, including the two flours you suggested.

Yes absolutely! Just use bean Juice ( aquafaba) instead of eggs 1/4 c per egg

Gluten in not bad for you unless you have celiac or suffer similar symptoms of someone with celiac.

In fact, gluten free foods are usually more fatty because they contain more sugars and other ingredients to make the food taste as good as food that contains gluten

john petion Hi just want to let you know how good this dough comes out, it is awesome, made lasagna noodles. They are just great, best I've had since becomming gluten free. I let the noodles dry out a few hours, boiled themfor 3 mins, then made my lasagna. I cut noodles for egg noodles, going to let them dry out for 48hrs and make chicken and noodles. Iet you know how it goes. AWESOME NOODLE

I have had to give up gluten due to Hashimoto's Thyroiditis .... gluten has attacked my thyroid. It's an autoimmune disease. Giving up gluten has alleviated ALL of my joint pain amongst other issues. It has been difficult because I love and used to bake a lot of homemade bread but thankfully sites like these allow us to enjoy regular favorite foods without the gluten!

@@johnpetion5689 for people, like myself, who have health issues because of wheat, going gluten-free is essential. Glad you can eat whatever you want to. But for the rest of us who can't eat wheat, these videos are necessary.
