I for one am glad that both are alive and apparently thriving in separate operations. The spirits of all members of ATK on the show appear to be much more relaxed with much less tension in the laughs. I often remember Bridget's 'soul that is a dark hole' quote that was just left in an episode. The ATK operation had to have been a hard vision to fund and launch. The amazing recipes that have resulted speak for themselves. IMO a national treasure.

Good adaptation of Cochinita Pibil (aka Achiote pork)! I like your recipes a lot, this time, I have to tell you that skipping the Achiote paste (aka annatto) is a big miss. Achiote the name of the dish! Note that nowadays, Achiote paste (aka Annatto) can be bought in major supermarkets, like W_mart or T_get; not just specialty food stores. I have annatto seeds (is that what they are called?) that I bought for another recipe. How can I change this recipes using these seeds instead of the tomato paste? Thanks!

Angélica Ko-Pe Annatto And Achilles are the same. The paste has additional ingredients like cornstarch to turn the powder into paste. I don’t think the additional ingredients add to the taste, but I could be wrong. The only thing with powder for paste substitution is I’m not sure how much can use to have the same effect.

Best coverage for the sugar cinnamon mix is to toss them in a paper bag and give them a good shake. That’s how it’s done in East Los Angeles. If your ever in Los Angeles and want to grab a good bag of churros. May I suggest the churro lady that has her cart in the south corner of the Lorena Pharmacy. She sets up in the evenings. Enjoy. To ATK, been a big fan of all your productions. Love you two, ladies. A real class act.

I am Polish the recipe is like my mom made. My best friend and I use to make 800 to 1000 pierogi for holiday dinner and throughout the year. This was our tradition for many, many years.

That recipe for braised citrus pork is awesome. Definitely going to try it. Last year I went to arguably the best cochinita pibil resto in all of Mexico City. It was terrific...probably top five taco, definitely top 10. Excellent episode. 👍

Im terribly sorry dear Tosh, but that is recepie is going to be short to the one you had, or even farther than the ones from Merida, the key ingredients of the Cochinita its the sour oranges (that are given in winter), and the achiote paste that is not that hard to find, im sure you can find someone from El Paso, Texas that can send you a few box of it, it cost like 4 bucks each box with 4 little bricks , one brick is for 2 kilos or 3 1/2 pounds of meat. I do seasonal catering in the nort of México, and my recepie have beaten a few chefs. Give it a quick research in ebay or "mercadolibre" for them. If not, and if you don´t mind paying the packaging i would gladly sent you like 2.2 pounds of that special paste. (it works for grilled chicken too). Cheers!

BTW, notice in my original comment that I called this recipe “citrus braised pork” because I knew it wouldn’t taste quite similar to the cochinita pibil I had in CDMX. So delicious.

I grew up watching this show with my Mama. I remember summer days perched in front of the tv, oohing and aahhing at the recipies and testing that I saw. Cooking reminds me of those happier days, and this show brings back those memories too. ❤

It might be harder to find in some places, but with Amazon, it can be obtained within 2 days. It's not exactly the hardest to find ethnic ingredients too, since Annatto seeds have been used to color cheddar yellow.

we had a backyard spit (mechanical turn with indirect heat from the wood) and used apple cider and garlic to spice the pig... never used a suckling... they were toooo expensive... did this many times and loved it!!!!!!!!!!!!!! miss thos days

Y'all couldnt buy achiote paste for this? Amazon? Tomato paste is a WAY different flavor than achiote paste. It looks good, but totally different flavors.

The piping onto the baking pan and chilling was smart. When I tried it with a friend we piped it directly into the oil and it was a complete mess (he also didn’t get the right size piping tip so that didn’t really help)

I love to watch The Test Kitchen how you bring out the flavor in food and make it easy, can you test on making Alcapurrias its made from grated green bananas and in the center it has ground beef, most of the time its oval fry fritters Alcapurrias.

I actually kind of like Newman's Own salsa, though I get the medium, and it might be one of the variations like black bean or something. At least it has a somewhat fresh flavor. I guess I'll try Chi-chi's, though. I don't think I've tried it in a while. I can make salsa, but I don't always have cilantro on hand. Sometimes you need to throw some salsa on something unplanned or grab a quick snack. Plus, salsa's always better after a couple of hours for the flavors to blend -- otherwise, it's just runny pico de gallo!

What do you do with all the excess oil you have after frying the churros? Save it? Dispose of it, and if so, what steps do you take to dispose the oil?

Love these recipes. Question, I have access to annatto, how much should I use? Grew up, using Wilton's products, still have tips, pans and accessories from 18 years ago. Happy that they're still rocking the dessert decorating world.

This is the first time I have ever seen someone toast tortillas over the gas grill instead on a comal. I've been doing that for decades but I thought I was weird for doing it. Even my mom who taught me cooking used a comalito. And Julia's right, toast the tortilla so it's a little charred around the edges.

I made these tacos the other night. I'm not sure why the meat wasn't tender. Used the same cut, same everything as the recipe called for, after 2 hours tho meat was anything but tender and ready to shred. They were tasty when they were finally done but it took so much longer than the recipe said....like several hours longer.

Sorry Ladies but, you gotta get the Achiote Paste (Anato) because tomato paste will not give that authentic flavor. That’s what makes it a cochinita pibil.

Tomato can never substitute anato or axiote; that is like substituting strawberries with radishes just because they are red. And habanero is not pronounced ‘Habañerro” there is no ñ in it. Salsa doesn’t date “all way back to the Mayans” Salsa mean sauce, SAUCE, there is a word for it in your language.

Thanks for the tip about the habanero pronunciation. I’ve been mispronouncing it. I think the word salsa has been incorporated into English to refer to that type of well...salsa they were making. It would be weird to refer to salsa as sauce in the US. Languages change all the time, particularly English as there is such variation worldwide.

You absolutely cannot substitute tomato paste for annato paste. This is more of an Italian braise than a Mayan pit roasted meat. Completely opposite ends of the spectrum. While I’m sure this recipe is delicious in a taco it is decidedly NOT Chochinita Pibil.

Sorry...but giving a push to use single-use/disposable plastic piping bags is an environmentally irresponsible choice. Marine life and birds in today's world cannot handle any more single-use plastic!! I've been using the re-usable plastic piping bags for over 40 years. Washing them is not such a difficult thing to do!! We NEED to think more of the environment, and disposable plastics are destroying it.

I love your shows and your KZfaq channel. I love getting recipes and insight on products. However today's choice of throw-away, single-use plastic makes me sad for our world's wildlife. At the very least you should have shown people how to responsibly cut this plastic cone open so that no wildlife could get caught in it and choke. Big misstep on your part. : (
