Have you ever considered doing a segment for Canadian Butter Tarts? They are a delicious brown-sugar, buttery, custard-like filling baked in homemade pastry, usually in a cupcake pan. They are very popular in Canada, with thousands of individual recipes and ingredient variations. For some reason most of the US has never caught on. It's totally the sort of recipe you guys would master in the testing process, plus would expose this wonderful dessert to more of the US!

Dear Julia and Bridget, After following you for many years, I feel moved to let you know how much I appreciate your work and enjoy the way you present your recipes. You clearly are food artists that work with the many variables until you obtain top results. Your way of presenting is more like sharing the techniques with your friends; we home cooks that benefit so much from your work. I share what I learn with my Wife, who has become an even better cook, serving improved dishes. Giant thanks to both of you and your staff, you have been big contributors to our home menus. Love y'all, Dean & Ginny

I have always noticed that soaking wood before placing on the grill gives an off flavor as compared to dry wood. I fully understand why the wood is soaked so I prefer to use wood chunks without soaking. Looks like a taste test could be warranted!

I had a buddy from Oregon. When the peaches were ripe on the trees there he would rent a Uhaul box truck and bring back to Phoenix crates of fresh peaches. I never knew how good fresh peach pie could taste. Or for that matter fresh peaches. These peaches were on the trees less than 36 hours previously. Make you want to slap yourself.

All right... I'm originally from Alabama, my dad was from near Clanton. I had cousins who were Miss Peach. There's a garden named after my aunt at the Peach Park beside the Giant Peach Water Tower. Peach pies are awesome!!! When you put in the lemon juice, also add... A shot of brandy. Don't tell my family I said that! There are many varieties of peaches. My family always got the" cull variety " It was not until I was in high school that I realized that the cull Peaches we're not good to take to market. 😆

During the "COOK'S COUNTRY" opening song, you show a fruit pie being made. There's only a brief flash of what appears to be a cherry(?) pie with a pink cream top layer being poured onto the cherry(?) pie already in a pre-baked crust. WHAT IS THIS PIE? WHAT EPISODE DO YOU DEMO IT? THANKS.

Chicken looked good, should have cooked a little longer. Loved that method however.. Now the fried peach pies, we grew up having them pan fried in a cast skillet, using very little fat( maybe 1/4 inch of fat in the skillet, turning the pies often. (back then the fat of choice was lard,, then crisco came into the scene, however lard fried pies tasted better) Fried pies have a completely different flavor profile when pan fried. Most think they taste much better.. We made them with various fruit that we grew. Apples were my favorite, but the filling has to be made starting with dried apples'.. Plum, Pear, Peach, strawberry and last but not least blackberry fillings were used , depending upon season and availability. .Those hot fresh blackberry fried pies were awesome , especially slathered in fresh made butter... Talking from experience here in Alabama. Loved ya'lls video!
