How to make homemade Tarka Dhal!

Hey my fantastic fans! Please give this a go if you want a healthier more vegetable focused dish! it can be done in a slow cooker because it does need to reduce for a long time,
Ingredients:
Serves 2
1 cup of red lentils
1 medium sized brown onion
1 tomato diced
1 tsp turmeric powder
1 tsp salt
3 heaped tsp ginger paste
3 heaped tsp garlic paste
3 green chillies
2 bay leaves
1 heaped tsp ghee
3 dessert spoons vegetable oil
2-3 tsp mustard seeds
Method:
make sure you have all your vegetables and spices ready to go,
Wash your lentils a couple of times as well to get rid of any unwanted bits.
Heat up a large high walled pan to medium high heat and add your lentils and 4 cups of water. To this we are going to add most of our ingredients now so we add our bay leaves, tomato, half our onion, salt, turmeric, green chillies, 1 tsp of our garlic and 1 tsp of our ginger pastes.
A few tablespoons of vegetable oil are also good here to help cook the food properly without it sticking once it starts to reduce.
Turn the heat up so you have a rolling boil. This should be reduced down to a custard thick consistency, this should take a good 20 minutes so put it on a back burner while we do the second step.
While your lentils are becoming wonderfully flavoured and reducing down,
to another pan we add 1-2 tbsp of vegetable ghee and 3 tbsp of vegetable oil, turn up the heat to medium high and when the ghee has melted add in 2-3 teaspoons of mustard seeds.
Once they start to crackle and pop, quickly add in the other half of your onion followed by the leftover garlic and ginger paste. let it cook out on a medium high heat for 5 or so minutes or until the onions lose their rawness and begin to go golden brown and all the ingredients have caramelised nicely, optionally at this point you can add some red chillies.
add the ingredients back in to your other pan with your lentils and use some of the water from that pan to deglaze your other pan so you can get all that wonderful caramelised flavour into your dish.
Once these are both combined give it a good stir and reduce down to a custard consistency or until it becomes a sauce rather than a soup! serve over boiled rice and enjoy!

Just made this. Got the Indian bay leaves and dried Kashmiri chillis on Amazon. Did it all just right. DELICIOUS!! Couldn’t stop eating it till it was all gone. And my house smells awesome. Am going to make it again on Sunday when my daughter and her mate are coming over for dinner. Looking forward to trying out more recipes from this channel. Makes me proud to be a Yorkshireman living amongst British Asians (who are also Yorkshiremen and Yorkshirewomen).

Thats great! I would highly recommend you check if you have a local asian store too. That way you won't need to buy off of amazon if its more convenient.

The absolute most important part is to put the lid straight back on as soon as you tip the tarka into the daal. That’s how they get that lovely garlic smokey flavour into the dish. He mentions it in his daal bhuna video. It’s taken me years to figure that out!!! Thanks so much.

We feed our young, elderly and sick dhall. Of course though we all eat dhall. Its incredibly nourishing and can provide a full meal when eaten with rice. Its one of the comfort foods of our culinary culture. Although there are a million dhall recipes, every one of them mouth watering good 😊

Bro, i am glad your girlfriend liked it. But, what ever you ate is not daal. Another thing, and this is not a judgement at all, just saying coz we all can't know everything from all cultures, its daal not dhal.

Anyways as daal/dhal is written in other alphabetic systems than the many many many alphabetic systems of the world, then it can be spelt in numerous ways in other alphabet systems. So it can be dhal to some and daal to others who use the Latin/Roman alphabet system.

@@ts4686 you are correct, it is written in a different 'alphabetic system'. That is why I, who can speak and write both Hindi and English would have a better grasp of how it can be accurately phonetically written in a roman script. Because the only thing you can do is to make sound like it does in the original language. I think i would be a better judge of that. Of course, you are free to pronounce it wrong. So it can be dhal to only those who don't want to pronounce it correctly. Of course, you are free to not want to have to do it. Also, English is widely spoken in India. People from many different states can't really speak each others language. We use english to bridge that gap. That is is why more or less all menus in urban and semi urban india are printed in Roman script. Dal or daal has been spelt out in roman script on thousands and thousands of menus in restaurants across India. The correct spelling has been established. But your boy here does not know anything about a 'dhal'. Not how it's pronounced and not how it's made. For that mater if he was even 50 % correct in how to make it i would have appreciated his effort and not bothered with the pronunciation. But his recipe is all wrong, with all the right ingredients, but still wrong from the get go. may be the tempering was ok. Call it what ever you like but please go find someone who has lived in india till they are in their mid twenties and have the daal they make. You will realise what you really are missing out if you though the bowl of mish-mash you ate was good. I also find it highly irresponsible of a professional like him to dish out what ever BS he thinks is daal. He is misleading his followers. I wonder if he does this with other cuisines that he is not familiar with. Rest is up to you man. Cheers

@@abhinav0686 So many assumptions. Anyways m not sure who youre so upset with about their DAAL recipe. You do know you have commented on a person's comment who said that they made it for their gf, and not directly to the person who posted the video, and nowhere does it say how they made it. There is a massive Indian diaspora around the world, and as many recipes as there are for various dhal recipes in India, as are there as many changed ones through the various Indian diasporic people around the world, depending on where in the world Indian people were enslaved and moved around by europeans. Indian people took a horrific violent situation and turned it into some of the most diverse global, yet distinctly Indian food by developing their recipes through need. In some of these countries daal has been spelt as dhal, because a 'd' sound in English is not the same 'd' sound in an Indian language, hence the 'h' added to soften the 'd'. The europeans would not allow Indian people in many countries around the world to speak their mother tongues, hence through spelling one had to be reminded of how to pronounce words. These spellings do not follow any grammatical rules. Its purely colloquial vernacular.

I love this cuisine, and you have a knack for simplifying the sometimes lengthy cooking process. This really looks delicious, and I am going to make it tomorrow. And a BIG thank you for giving the recipe ingredients and amounts , I have come across videos of recipes without even a link to the ingredients and certainly not included beneath the video , so it turned out to be a guessing game. Yes, please, more! I appreciate your mis en place and showing what the amounts look like as well as giving the measurements. I've been cooking Indian-style vegan recipes for a few years and love these flavor profiles. However, I always left out the bay leaf, because I don't like bay. Today, I learned from you that it is a different type of bay! This is something I love about cooking - always something new to learn!

This is just the right consistency like you did, let it reduce and thicken. That's how I make it. I have had this in a few restaurants and sometimes it's OK, but sometimes like thin yellow water with a few bits in it. Its easy to mess this dish up if you make it too thin and don't add enough flavour.

I made this tonight and it was bloody great. I have sort of half tried to make this before but it didnt turn out right but this was amazing. I was just eating some of the leftovers cold and its really nice even still. Great job would love some more vegetable dishes just cos i tend to have those lying around and things like this are great to cook when you dont have anything in the fridge.

OMG. Just made it. This dish is out of this world. I have been looking for this recipe over ten years from my favourite Indian restaurant that closed on me (sad story). The only thing different that I did, is that I replace Bay leaves(did not have) with Kaffir leaves.

I found out about Dhal when my workplace started serving it at lunch. I had been planning to make it for the last two days and I found your video. I followed it all besides the ghee and peppers and I must say this was truly amazing! SO GOOD! Thanks for showing me an awesome dish. I did add some cilantro and Potato to mine to thicken it up more. Yay! Following your recipe and procedures, I finally made a dhal that tastes really good. Following other recipes, my dhal never had the depth of flavour and texture I wanted. I think the key is to not skimp on the oil and ghee. Essential for bringing out the flavours of the spices, and for getting the right textures. Looking forward to trying more of your recipes. Cheers latif all your recipes are spot on. Had to substitute whole Kashmiris for some dried Thai reds and yellow mustard for the black mustard but came out a treat. Currently on day 3 of your recipes and going for day 4 tomorrow!

I made this. Thanks for the recipe. It wasn't the flavour I was looking for, but was nice all the same. Unlike other attempts I've made at Tarka Dhal which were bland and no one finished it, this has a good flavour and will get eaten. The predominant flavour was the bay leaf. I was looking for something with more of a garlic flavour and was thinking of using cumin and curry leaves in the tarka.

Wow! Mouth watering indeed! Fwiw “tadka” is an onomatopoeia - sounds like the crackling and sizzling (“tad” “tad”, with some imagination unleashed lol) of the mustard seeds, cumin seeds (may be added), garlic-ginger in the hot oil as well as the sizzle when this is added to the dal (lentil).

Latif, this was so nice to watch and learn. I have had this in restaurants before but never knew that it was done in two stages. My compliments to you on how clear and simple your instructions were, as you made it very easy to follow. Compliments also on how shiny and clean everything in the kitchen is. I have never used red dal before, usually we use yellow. But going to try to transition to tarka style : ) Nice and fatty

Omgee I salivated all the way thru this😁 I could eat this daily. I live in the Scottish Highlands and have limited access to some of the ingredients ( unlike when I lived in Southall) So a wee trip to Glasgow's west end to the Asian supermarkets is in order. Thank you for sharing 😘💕

My partner has grown up on amazing home-cooked Indian food, and her dad has regularly cooked amazing spreads of curries and sides. Cooked this for her last week and she adored it, I'll be cooking for her parents in a few weeks time now! Thank you so much for sharing this!

thank you Latif, today I cooked this recipe, it tastes marvelous! As my body doesnt tolerate ginger :( I took galangal instead and at the end of the cooking process I added some tiny strings of lemon peel and juice - jummy! This dominates in taste like the ginger. The best oil for health in kitchen is ghee! I make it myself from sweet Irish butter, the best butter I know, once a month.
