Why does my beef brisket soup turned out tough even after being in thermal pot for 5-6 hours?

Overcooking meat, even meat that comes from the more tender muscles, can make it tough. That's because heat causes the proteins in the meat to firm up. Overcooking also basically squeezes the moisture out of the meat, making it dry as well as tough.

Carol's Kitchen thanks for taking time to reply. But from beef brisket videos, it showed the longer the brisket is cooked, the more tender it should become. Some braised it for 12 hours or overnight even.

you have to have brisket with some tendons on it and also lower your fire to slow cook it for 90 minutes. Afterward, put in the radish aka daikon for another 30 minutes. Don't use high flame or your beef will become tough. Just a pointer for moist and tender brisket for you.

Thank you for the video. But you do need a spatula to remove all that sauce. That’s a lot of sauce wasted on each little saucer.
