The absolute Best Hot Sauce I have ever made - a Total Keeper! I actually followed the directions (and Proportions - a first for me), but split the batch in two - Blended ("My God I love Blending...") the first half as per the recipe, then Smoked the second half with Hickory Chips and blended it as well. Both were incredible - I personally liked the Smoked version better. This is a wonderful sauce - Hot enough for me, but mild enough for my non- Chili-Head Brasilian wife. I would add that there is other form of preserving it,like for exemples :use an organic apple cider vinegar (with mother),when the hot sauce is cold ;). Then, let it rest at room temp. for as long as any shriratcha you would make, or fermented vegies. For a last exemple,you could just ferment the peppers ,then mix it with the other ingredients,or you can also make your whole recipy ,and then ferment it with small release air flow pressure lids to keep it from keeping to much gaz produced by the bacterias.Anyway my point is; If you guys would try that instead, it would be tastier and healtier for your gut. ps: I freaking love your channel ! I'm honestly happy that it's growing super fast and you have a few other related shows ! One day in my compagny, if you still do that ,i'll find a way to reach to you, and invite you here, as i will have stupid spicy things , but also mild ones for balance . It is in Canada. Made the jalapeño pineapple hot sauce today! Really tasty, but I did have to make a few adjustment. Figured I'd share for those who are interested: The 2 cups of vinegar was A LOT and the sauce ended up tasting very vinegar forward, and also a bit watery. Ended up adding some more pineapple to thicken it up and add some sweetness back. Also used a few habaneros for added heat, used 1 tablespoon of lime just & 1 tablespoon of lemon juice, and blended a handful of cilantro in with it all. Loved the end result and highly recommend these slight alterations!
