RECIPE
INGREDIENTS
235 grams of unsalted butter
1 and a quarter cups of sugar
2 large eggs
1 tsp. vanilla essence
3 cups of plain flour
2 tsp. cream of tartar
1 tsp. salt
3/4 tsp. baking soda
topping ingredients
1/4 cup of white sugar
2 teaspoons of cinnamon
METHOD
Start by creaming the butter to get some air into it for 3 - 4 minutes. Add the white sugar and mix until well combined (not grainy).
Add one egg at a time until well combined.
Add 1 teaspoon of vanilla essence
Mix together plain flour, cream of tartar, baking soda and salt. Add to the wet ingredients and mix until just combined. Cover the dough and place in the fridge for at least an hour.
Preheat the oven to 180 Celsius or 350 Fahrenheit and line baking trays.
In a small bowl mix together a quarter cup of white sugar and two teaspoons of cinnamon.
Shape the cookie dough into balls, toss them in the sugar and cinnamon mixture and place on the baking tray.
Once all the dough has been rolled into balls, place the trays into the oven for 10 - 12 minutes. Once baked, allow to rest for 5 minutes and then transfer to a cooling rack.
