I made this for dinner tonight and it tastes the same as my mom's curry! I had a tear in my eye cause I thought I would never be as good of cook as her and today I can say, I have become an adult. Thank you Marion!!!!

I never stopped being amazed by how good you are in decipher food from all different culture! You made the most delicious and authentic drum stick chicken and mapo tofu among the recipes I have tried. How did you even have the opportunity to try so many authentic food, remember the flavor and be so accurate in decipher the recipes and make it even better?

I'm flummoxed at the combination of flavours here! Garam masala, curry powder, soy sauce, honey, apple juice...it's amazing how well these otherwise strong and distinct flavours compliment each other.

@@lynisganda01 The grated apple makes for a richer flavor than juice. And often a tad less sweet.

@@jorozfrench It's a little sweet, but the spicy and strong flavors of the curry roux counteract a lot of the sweetness so it's still EXTREMELY savory.

It's my absolute favorite. My fiancee makes it for me every birthday and a lot for holidays. It's not even particularly fancy, it's just I love it so much. I try to save it for special occasions because when she makes it, I can't stop gobbling it up!

I think that the issue with the red pickled ginger is that, in the recipes that I’ve seen for it, one of the ingredients required is the pickling liquid from umeboshi plums (a type of pickled plum). Unless you are living in Japan (or have ready access to Japanese ingredients), obtaining umeboshi plums (and for their pickling liquid, rather than the plums themselves, besides) is not really a practical option. Particularly when you consider that the readymade umeboshi plums and the readymade red pickled ginger are already of a high quality. I looked into making homemade red pickled ginger a few years ago (because I love making homemade things myself), and this is the conclusion that I came to. Unless you are making your own, homemade umeboshi plums, it’s not really worthwhile, because the red pickled ginger is almost a by-product of the umeboshi plums. So, it’s only worth making one with the other, not separately. Hope this helps. I ❤️ Japanese food (and try to make it at home, too).

I'm an Indian and it always fascinates me when certain recipes call for curry powder because we don't have that in India. We have different spices, and we grind and blend them differently for different dishes; popular are garam masala, meat masala, sambar masala etc.. But what is this curry powder that the rest of world seem to use?!

it's an arbitrary spice mix that brits first brought back with them to represent the 'taste of india.' it stuck for the rest of the world and the generic blend is what we associate with the 'indian' or 'curry' flavor.

Where I live it just seems to be garam masala plus random spices(turmeric mostly), I have honestly never found a use for it as its hard to control the flavor and powders don't keep very well.

Basically then a curry powder is any spice mix with ground turmeric, coriander and cumin as the base.. I guess without a hard and fast ingredients list curry powder could be made to suit local taste, like a Japanese curry powder, I imagine, would have some other local ingredients.

Japanese curry is the Japanese version of British curry which itself is just a generic version of Indian curry. I heard it's a lot sweeter.

thank you sooo much for this recipe. My grandparents are japanese and my Grandma used to cook the best curry ever. I looked everywhere for a recipe of a curry that tastes like hers and I finally found it! It came up delicious! I also really like your voice, it transmits calm

Marion! I spent a fair amount of time in Okinawa, Japan and I have been trying to replicate that beautiful golden curry ever since coming back home to the US. I feel like I can smell this through the video 😭❤️ I’m so excited to try your recipe! ❤️❤️❤️

add coffee, like left over coffee or even just instant coffee powder. about a half cup of coffee in your recipe/Japanese curry.

@@Marionskitchen ... sorry, maybe, less. start w/much less amount of coffee first and see if/how you like. I don't make Japanese curry anymore due to my son's wheat allergy but used to add some coffee which really upgraded the taste, it seems to work just w/Japanese curry. ... thank you for your courtesy to take your time to reply me :)

@@Robotose well thats like two migs if coffee, i think 1/3 teaspoom for taste test is ok, with unstant coffee you can always add a little bit more

This is a great recipe! Everyone loves it and it is very filling. The sauce has a beautiful texture and is so colourful. Even my father loves it, though he usually only likes plain Dutch food with not much seasoning. Thank you!

Hey Marion! Tried this recipe a couple of weeks ago and absolutely loved it. Am going to make it again tomorrow but I have no carrots at home this time, so going to try adding a little bit of spinach just to add a veg apart from the potatoes...hopefully it’ll turn out just as yum!😊 much love❤️

Thank you for this recipe! I made two substitutions when I tried it. The first was grating a fresh, washed Fuji apple and using that instead of juice. The other was using a red onion I had chopped up and in the fridge. The fresh apple turned out great (and better than having a partial container of juice in my fridge) and interestingly, the red onion didn't affect the flavor like I was concerned it would. My roux came out more of a paste than a sauce like yours; is 50g butter to 1/4 cup flour the right proportion? It didn't affect the end result, but i had to do a little more work to coat the chicken.

We're spoilt in Oz (Australasia) with Thai, Indonesian, Malaysian, Indian, Japanese, Sri Lankan etc food. Americans have no idea what's out there nor the authentic way to make food from such cuisines from way over in the northern hemisphere.

I just made this today and it turned out great! I used a bit more vinegar and soy sauce to make it just a little bit less sweet, but it's a great fullfilling dish!

I wish I could meet you, Marion! 🤗 You are SUCH an inspiration! 🤗🤗🤗I have Absolutely ZERO tolerance for spice🙈, so most recipes I have to tweak/alter a bit but other than that, I'm constantly smiling while cooking with you! I suffer from severe anxiety and mild depression so having a smile on my face is sometimes difficult or rare for me to achieve. You make it so easy! Okay! Enough "fan girling" lol. I haven't seen that recipe, but Japanese curry is Japanese curry. I imagine the only real difference would be that she used chicken katsu instead of chopped up chicken thighs.

Marion, I stumbled across your channel when looking for a Japanese curry recipe that I could easily make gluten free. I cooked this tonight for my friends and it went down a storm; empty plates all round! Thank you so much. My friends and I cook each Saturday with one another, and I would love to cook another of your recipes! Which (preferably gluten free) crowd pleaser would you recommend I try next?? Xo

I made this today, without the meat and with orange juice and I liked it. Some mixed-grain rice on the side and I had a healthy, savory dinner :) Also easy to make and adapt with regular pantry ingedients so this will probably have a return to my kitchen.

If you haven't ever, you should try it with apples. It's very good and important to the flavor. Also, did you use anything in place of the meat or just rely on the potatoes and carrots?

@@DeltathRiylaan i didnt use any meat this time. The orange juice felt very strong and worked well with the potatoes. I did try it again with apple juice and chicken thigh, though I think I like the non-meat version more, because it tasted more distinct and... well can be used for meat-free days. I also want to try sweet potatoes in the future.

As someone who has eaten and made many forms of curry, Japanese curry is extremely different than any other variety and it's insanely good. One of my favorite foods.

I've been living in Japan 15yrs & I have some local secrets to share for you! Splash a tiny bit if "sauce" it's very similar to Worcestershire sauce in taste & also a bit of instant coffee.. it makes the flavour really good!

@@zenadawalibi2701 everyone calls it Sauce. Or Usta sauce... Looks & smells similar to Worcestershire..sauce. I guess add that if you have any

@@ayavideodiary8071 it's called Usta sauce because it's a Japanese version of Worcestershire sauce. Japanese have troubles pronouncing "w", so they made their own word.

I've always wanted to try Japanese curry and for once here's a recipe I can actually do without being allergic to any of the ingredients (I'm allergic to so many things but the allergies I see on all instant curry is things like chocolate, palm, tomatoes, and coconut) I'm so excited.

Thank you soooo much for this video!! few years back I searched for Japanese curry from scratch but ALL of them required curry mix from a packet, we don't get that where I live so i had given up hope of making this dish on my own

Marion I tried a similar style with Vermont curry broth, but used folk beer. It was delicious also a bit of mirin in it. Definitely recommend

I had some chicken thighs that needed to be used up and was in the mood for some japanese curry, so this seemed like exactly what I was looking for. It's simmering on the stove as I write. It smells delcius!
