You Will Need
For the Lemon Curd
140g / 2/3 cup of Superfine Sugar
4 Egg Yolks
2 Lemons, Juice and Zest - you want about 100ml / 3.5 oz of Juice
60g / 2oz of Soft Butter
For the Strawberry / Blueberry Curd
140g / 2/3 cup of Superfine Sugar
4 Egg Yolks
100g / 3.5oz of Frozen / Fresh Strawberries or Blueberries
60g / 2oz of Soft Butter

I love lemon curd so much! On toast, pancakes, oatmeal, ice cream, yoghurt, scones, baked into muffins, eaten aight out of the jar, it's so delicious! 😍 I imagine strawberry and rhubarb would be a great combination or something tropical like mango and coconut.

lemon curd is my all time favorite-- and this is so easy to make-- i can remember my grandmother when i was a kid making a curd from pawpaws that grew on our land-- all of us kids looked forward to this every year-- many blessings...Glo

she always made a much larger batch- cleaned peeled de seeded and mashed pawpaws with old time potato masher- and used im guessing a dozen egg yolks-- it tasted like a bannana jam-- huge hit in our family--- ♥♥♥♥

@@Steve-Owens I live in Indiana, USA where Pawpaws grow wild if you're lucky enough to find a producing tree that hasn't been gotten by other foragers or animals, lol. IF YOU CAN! YOU MUST! TRY! PAWPAWS!! It should be the LAW! lol So interesting! Not really like a banana or mango or pineapple but somehow, the mixture of flavors in there makes you wonder if it was an ancient science experiment, a cosmic joke or a total Blessing from God Himself!! hahahaha! PLEASE! Order ahead next year as they're best fresh, never frozen and you live far, far away, LOL. You'd have to order them to be shipped in short order with speedy shipping, just after picking. You don't want them NOT ripe, UGH! (gags). Very astringent beyond tolerance when not ripe, lol. YOU DESERVE PAWPAWS!! *Blessings!*

Hmmmm....now I am torn between using my (soon to be) leftover Elderflower Cordial in a Curd or use it to flavor a Traditional Mead I have made....looks like I might have to buy another bottle of Elderflower!

Geezy pete I absolutely love lemon curd Several recipes I’ve looked at were so involved, your’s seems doable by me on a good day. Maybe I’ll try to make some sugar free. How about pineapple, love that too🎈

Best recipe I have found. But on your website page it says cook temp is 170C-180C. 325F-350F.

Any aromatic, citrus fruit should do the trick Steve. Lime, orange, Kiwi, Guava, Apple, Paers would be my favorite. Though I haven't tasted or made one myself. Just an idea. Have a good day 🌹🌹

I have loved this all of my life as my Gran had a Bakery in Lancashire but I need it to be more of a sauce than a curd to use with my Christmas Pudding but want all that richness, fewer eggs??

You make this look so easy. The first time I tried it, it did not set. I think I will keep an eye on the temp this time. What about pomegranate curd? Or apricot curd? I have so many of these and eggs so worth a try.

I don't know if you read comments from older videos but, I use a lot of "Mixed berry" (Organic ONLY) for Smoothies which comes frozen. Once it's all ground down well in the blender and run through a screen to remove all seeds. there's always SO MUCH pulp left with the seeds. Can I use that to "cook down" for berry Sauce or with your method shown here to make Curd? THANK YOU so much for all of your wonderful videos!

Novita L I can't rightly say at room temp. I prefer to keep this in the Fridge, where I find it last at least a few weeks.

lemon and lavender would be heaven. I wonder if it would be best to muddle the lavender buds with the sugar, to make a lavender simple syrup, or to add the lavender buds to the curd and strain before putting in the jar.

Microwave the lemons for 10-15 secs it will help release the juice first too

Yum, Lurv Lemon curd. It wouldn't last a month in my house. LOL. Not tried to make other varieties yet. It's handy to use in other recipes, like quick lemon ice cream, or lemon curd drizzle cake. I wonder if you can add natural oil flavourings like almond or vanilla to curds. I have tasted orange it's yum. Thanks for sharing Steve. Take care. ❤🐶☺

i puree'd fresh strawberries . simmered them n a pot. then made the curd as usual but i substituted fresh lime juice and lime zest. strained the mixture. and it taste exactly like fruit loops cereal lol im not mad at all !!

I do love lemon, but LIME is my favorite. I would like to try substituting lime for the lemon in the curd, I'm hoping it will taist like key lime pie filling. Although half and half would be nice too.

I love lemon curd. Just so happens I made some a coupe of days ago and put in some passion fruit. I notice a lot of recipes say just cook the curd in a saucepan but I have always used a double boiler method as you do. I think this gives a much smoother result. I also make coconut jam (Kaya) using the same method but I am yet to get the same flavour of the Kaya produced fresh in Malaysia.

I love Kaya and Lemon curd, double boiler makes this so easy to make, I actually just made a batch yesterday.. coincidence :o) If you make it in a Pan the chances of the egg cooking are very high, in a double boiler almost not at all :) Happy Wednesday..

Sounds great, I do think Watermelon might be tricky because of the super high water content, maybe you can find a concentrate or reduce it down before adding it? I would love to know how that works out :)

Sounds like fun! I'll try and see how it works. Maybe evaporate the pieces or maybe boil it down? Not sure how it would affect the taste or consistancy. I wonder if you can press it and keep the pulp. Worth a try, I suppose. :)

My vote would be for guava or mango. I know that I have seen avocado used in sweet desserts in Asian cuisines, but will it curd ? I have never been brave enough to taste a sweet avocado dish, so I have no idea how it would be made. Crazy , I know...

I want to make a guava curd and a pineapple curd. What I wanted to know is, how do I know how much of the fruit to add? Also can I pump up the flavor by reducing the liquid in the fruit by pureeing and cooking them. Any advice will be greatly appreciated.

To be honest Lily, you are playing in new grounds for me, so I would be guessing but I would say they would work well.. Pineapple is hard to set for a Jam but with curd is should be fine..

I made your lemon curd and loved it. Years ago my mum used to buy sour milk and make curd cheese. At that time I don’t think it was pasteurised and now curd cheese is difficult to find. Do you know how I can make it at home? Gill

Curd Cheese is not complicated to make Gill. Good Full fat Milk, some starter Culture to set the curds and then drain. I can't share that video yet I am afraid, time is against me..

I must try it, when my Neighbor 2 doors down brings me lemons stacks by the shopping bag load, plus I have a Young Lemon tree of my own. I think they are Meyer Lemon's they are not very sour. i can sip the juice easy. What about Oranges would that work, I also can get stacks of those as well.

Meyer lemons are the best, but you might not need as much sugar, or you could mix in some other very sour lemons with Meyer lemons to make it more lemony.

You sure can, Pineapple is a hard Jam to set but not so with a curd.. :)

Is sugar necessary? I want a really tart lemon curd to go with macarons. I wonder if I can reduce sugar by at least half and maybe add gelatin or cornstarch to help with the thickness?

It will taste bland and lifeless. I suggest you try my way and then yours and see, life is about experimenting but my experience would say the former..

Did I understand you correctly, you are sealing in a sterilized jar (canning) and once you open, then store in the refrigerator? I ask because I've never seen any reference to being able to can lemon curd! Which would be awesome - as we have organic lemon, lime, orange and tangerine trees - lots of them!

You don't need to can it in the traditional sense, if the jar is sterilised and the Curd is hot, as it cools the jar will seal, for standard home use, even this step is not crucial, cleanliness will do.. But if you wan't to can them like jams.. you sure can can. :o)

You could but Olive oil (for me) would spoil the taste.. Also olive oil sets liquid which will effect the texture..

It will make a compote, the fruit is too soft to hold together.

You don't add the Shell either because it will make the curd crunchy, egg yolk is an emulsifier, egg white and shell are not.. :o)

How about mango curd? Im from Philippines we have a very delicious mango here and its summer here we have a lots of mango right now if time permits i will make mango curd. Yummy! 😍

I was so happy upon finding your lemon curd, i had found your sourdough starter recipe as well. NOW, strawberry lemon curd, omg, I am out of my mind, those are two of my favorites. I'm thinking of trying a red raspberry lemon curd or a red currant lemon curd, interesting.

I’ve been trying to make a passionfruit curd, but I find that what I have on hand is too intensely flavoured. How can I lighten up the curd without changing the texture?

So are you saying that making Passion fruit Curd with Passion fruit is too strong for you? That would surprise me? Passion fruit juice has a high percentage of water in it as does lemon juice, to make it milder you can add more water..

Steve Owens Well, my sister’s been badgering me to recreate a dessert that she had while on holiday and I was given a bottle of supposedly pure passion fruit. What I ended up with, to me, was more like a concentrated syrup, so I cut it with a little lemon juice. Granted, I’m going to pair it with a whipped cheesecake topping, so maybe it’ll balance out.

I am guessing that anything that can be preserved by hot water bath can be done this way. Like cherries, peaches, plumbs, apples, oranges, limes, pineapples, all berries of your choice. True or false? Take care from Oklahoma, Mike and Vee

Steve's Kitchen: I am pretty sure that if vinegar is not used it should work for your personal pallet. If it floats your boat, have at it and give it a go. But, berries and fruits are a difinent go. I do remember canning with the hot water bath that canning sweeter fruits with less citrus acid did require added citrus acid instead of high temp pressure cooking (like mangoes, apples that are not tart, etc. 40 yr old pint jars of fruits that I marked with Mom and still good don't lie to me, but you be the judge and jury. I would not try this recipe with any pepper but... It might be a new twist..... Probably not. Take care from Oklahoma, Mike and r

Hi Steve , you said lemon curd lasts for months but I've always heard lemon curd must be used up within a couple of weeks , and must be stored in the fridge why is this?

I think it would be delicious, you would need to be careful about the fibrous texture but it would work well :o)

Make sure you run it through the Vitamix to break it up and then strain it through a fine mesh strainer. I'm going to make a strawberry and rhubarb curd this week. I've already frozen the fruit so when it's thawed the cellular structures should be broken down. I'm thinking 1- 1 .5 cups of fruit should work. I'll let you know how it turns out.
