Marinated in a sweet and savory miso sauce, this Miso Salmon recipe makes a delicious weeknight meal. Enjoy with Japanese ginger rice!

INGREDIENTS
1 lb skin-on salmon fillet (cut it in half if it's one big piece)
For the Marinade
2 Tbsp miso (you can use any type of miso; I use Hikari Miso Organic White Miso for this recipe)
1 Tbsp sake
1 Tbsp mirin
1 Tbsp soy sauce
¼ tsp roasted sesame oil
For the Garnish (Optional)
½ tsp toasted white and black sesame seeds
1 green onion/scallion (chopped)

I love this dish. I usually leave it marinated in a container overnight, and fry it in a covered pan with baking paper underneath the salmon. No oil added. The miso paste burns very easily so cook on low heat, and covered. I think this method retains the moisture. If you’re going to leave it marinated overnight or longer, reduce the miso paste, otherwise it can get too salty, as the salmon will soak up too much of the miso paste deep into the meat. My method takes more effort though, as you’ll need to flip and cook all the sides. 😅 Thank you so much for sharing, Nami!

Thank you so much! They came all the way from Chiang Mai, Thailand. We were traveling there several years ago and found them at a beautiful shop. We brought a lot of tableware back to Japan (where we started) and then repack to bring it back to the US. :)

It looks really delicious! I love salmon. 🙂 If you leave it longer (like 3-4 hours or overnight) in the miso paste, would it get more flavor? Or would that be overwhelming and completely overpower the salmon?

I have noticed that Japanese recipes sometimes include much more ginger than in other Chinese / Korean / Southeast Asian cooking. When watching Udon Soba's channel, he puts a surprising amount of ginger into his braised beef (?) Udon. Do you know if the ginger you use in Japan milder or if this is just a matter of personal taste? Thank you for your videos, my family enjoyed your pumpkin and minced pork stir fry recipe!

I believe fresh produces taste differently based on the soil, so I believe ginger in Japan is mild too, as we like to put a lot on it and not as spicy (and tough) as ones I can get here in the US. But even here, there are different types too. Some are so tough, some have different color... If it's too spicy, we soak in water a bit (and squeeze water out before using). I'm so glad you enjoy that dish! My family loves it and eat more kabocha with that dish. :)

My oven probe came from my oven (Thermador). If your oven doesn't come with it, you can also buy ChefAlarm etc. It's amazing to know when it's done perfectly.

You can, cook the salmon skin side down. You may want to cover it with a lid if it's a thick piece. An instant read thermometer would be helpful to figure out if the salmon is fully cooked. Otherwise, break and see inside. :)

Depends on how thick your salmon is. I recommend cutting the 1 lb pice in half so it will marinade and cook faster. You can try it, but please remember miso is salty condiment, so I usually do 1-2 hours only.
