Thank you for demystifying Yakisoba. It looks awesome, it reminded me of the chicken Yakisoba I tasted in 1982. Thank you friend.

I want Kenji Lopez-Alt to make & eat this, and compare it to all the teriyaki chicken he's been eating across Seattle!
@justonecookbookСағат бұрын
Haha! I'm sure Kenji has his own way to make teriyaki chicken and does not need to make my recipe. ;)

Can it make the skin side dry? would it be better?
@justonecookbookСағат бұрын
If you use skin-on, like I do, place the skin side on and makes it crispy. You coat the chicken, skin side up, with the sauce. But chicken teriyaki is not a dish with crispy skin as a final dish. :)

@GODAXEN15 сағат бұрын
Castella came from de portuguese "Pa̋o de Castela" that mean "Bread from Castille", and Castille is a spanish region which name means "land os castles". Basically there is a relation between the word castella and the word castle.

My mom originally from Yokohama but moved to Hawaii in the late 1940s. She used to make sushi rice and have us kids fan the rice as she was mixing. She would scold us if we stopped fanning😂. We were only 7 or 8 yrs old. But I remember everything she made that was Japanese. … the love of Japanese food came from her!!!!! I miss her!!!

I tried this, it was pretty tasty but to be honest the amount of butter and sugar made it more like a dessert - I think I need to find a rather lighter version to cook on a regular basis or my heart and waistline are going to suffer badly.

Thank you for trying my recipe! I'm sorry to hear that it was too sweet for your taste. Teriyaki sauce is typically made with this combination, so I hope you adjust the amount to achieve the perfect balance of the sauce for your taste and keep the recipe. Happy cooking! 🫶🏻

As my husband and I are in love with Japanese cuisine, I decided I wanted to learn Japanese cooking. Your website was one of the first I found. The approachable nature, and the presentation of the recipes has me feeling less intimidated. Thank you for the extensive grocery suggestions on where to buy/substitutions for cooking ingredients. (Which outside of technique, is probably the MOST intimidating part.) I'm excited to make Onigiri, then Dango, once I find the flours.

KitchenAid's concern about kneading dough at high speed isn't the mixer tipping. There is a nylon safety gear in the gear train which intentionally fails if the mixer is overloaded. The teeth strip off this plastic gear to protect the motor and other gears. If you accidentally strip this gear, you can replace it yourself. About $30 for a new gear (order from any appliance parts seller). A bit messy to replace as it has thick grease in the gearbox, but all you need is a screwdriver and some newspaper on your kitchen bench. Ask me how I know! 😉
