Mix Powder is in essence a mild curry powder used in most BIR (British Indian Restaurant/Takeaway) establishments to form the basis of the spicing, along with the base gravy.
There are many different recipes, each with a slightly different ratio of spices.
It mostly consists of Turmeric, Cumin, Coriander, Mild Madras Curry Powder, sometimes Paprika, and occasionally a tiny bit of Chilli powder and Garam Masala.
Additional spices (with other ingredients such as ginger garlic paste, methi, tomato paste etc) are then added when cooking, depending on the curry, (e.g. Chilli Powder, Garam Masala, Cumin seeds, Fennel seeds and so on), to tailor that particular dish.
I have tried many combinations, and have settled for this Mix Powder recipe. It's based very closely on that of a professional chef with many years BIR experience. I chose it because I feel it has the right balance of spicing to work in synergy with my Base Gravy recipe (see Notes).

I follow both you and Dan (and of course the great Pat Chapman). I've been using Dan's blend since I begun BIR, but I like the look of this based on the madras powder addition, and a change is as good as a rest. Thanks for the video and recipe my friend.

Just made this, but added 0.5 TSP of commercial (Natco) garam masala. Gut instinct was to add 1 TSP, as the ratio seems very low. I've tried a fair few mix powders, and I usually reduce the amount of cumin and turmeric a bit, I think too much of these spices can be overpowering. I've used the recommended amounts this time though. Hoping for good results.

I want to make a vegetable curry... I have pre-cooked veg, base gravy and mixed powder. If I wanted to make the curry sauce and I have 0.5 litre base gravy and the mixed powder... how much mixed powder would I add to the base gravy? Would I fry the mixed powder in oil first then add base gravy or just add the powder to the base gravy? Can anyone give simple instructions?

Awesome. I've had good results from toasting the whole seeds in a hot pan before grinding. Brings out the essential oils apparently.

+Fredrin2000 There's a reason I don't suggest toasting the whole seeds before grinding. Toasting them certainly does accentuate the flavour, and I usually do so with whole spices if they are to be used immediately. However, the flavour degrades more quickly over time than if you hadn't toasted them, and if making a batch of mix powder you want to last for a few months, it's best not to. Good point though.

Something told me you'd thought this one through! I have noticed an amazing aromatic vapour coming off freshly toasted and grounds seeds, which I guess is basically like flavour escaping, so totally makes sense if you're making a batch for long term use. Last question as I've probably pestered you enough for one day: how important is it to have a pan that *isn't* non-stick? I've noticed you use an aluminium one with plenty of scraping involved - is that very important for the caramelization or can I get away with a teflon wok?

+Fredrin2000 A very good question. Aluminium has very fast and even heat conductivity which helps with the caramelisation. You can get the same or very similar result using non stick. It just takes longer, and you may want to start with s thicker base gravy. Horses for courses.

Good to know. Kinda wish I had one of those massive double flame gas hobs on my cooker to get the heat up the side of the pan - I imagine that would help a bit too.

Always good to see things in action. The problem for me is that a lot of recipes, like yours, add some pre mixed spices. In this case Curry Powder and Garam Masala. There's plenty of different Curry Powder mixes and of course everyone has their own Garam Masala. It puts two unknowns into an other wise exact recipe. Even if you name the brands, they may not be available in other countries.

A couple of months probably. Keep away from light and heat too. If it smells dull or stale bin it and make another batch.

You say add garam masala. But isn't the mix powder that you are making garam masala? Also there are many different madras curry powders available in different shops.

+Dinesh Ranaweera Hi Dinesh. The Madras Curry Powder is commercial brand. Here in the UK there are many... Rajah, East End, Shwartz, etc. Just use a mild all round curry powder that's not pure Garam masala. Where in the world do you live?

I find it odd you go through all the effort to make your curries from scratch (a fine job too) but you use premade curry powder as part of your mix. Any particular reason you do use pre mixed madras powder and not individual spices? or is it just for ease?

Without trying to sound rude but the clue really is in the name: it's a mix for takeaway style currys. Said takeaways use very similar, in fact most of them use the very same spices you can buy at a decent Asian supermarket from brands like East End. Including the masala and madras powders :)

Hi Jason. Spices are always fresher and have much better flavour when ground from whole. You can use pre-ground if you wish but just not as good.

One thing i never understand with recipes calling for curry powder and garam masala etc is that if you look at the ingredients they both share a lot of the same spices and then to that you also add the same spices again individually. So if the curry powder contains cumin and the garam masala also contains it and then you add more cumin separately, do the recipes take all this into account?

yes they do. it's all about tweaking and adjustment.

I feel as if the pre-made curry powders just have that something extra even though they all mainly contain the same ingredients. In my own experience the blending of the fresh individual spices definitely isn’t bland but once you add a bit of the pre-made curry powder it kind of just lifts everything up if that makes sense. I’m fairly new to cooking BIR style curries but just thought I’d share. :)

I agree with that totally. A little bit of a good generic curry powder rounds off the masala nicely.

MistyRicardo : it's a similar thing when I've made curries in the past. Everyone enjoyed them, but my palate told me that there was something missing, that something needed adding, even though I stuck to the recipe. Making the curry gravy sounds like it could be that solution, therefore I needed to make the mix powder.

+Abinesh Srinivasan A few months. Keep cool, dry, airtight and away from light. If it starts to smell a little stale or less pungent, throw it out and make more.

I'd leave them out of the mix powder. Let it be a foundation layer of common flavours. You can add the black cardamom when making a curry. Best not to roast the cumin seeds for the mix powder unless you'll use it fairly quickly.

+Dinesh Ranaweera It's unroasted curry powder (note the cumin & coriander are also unroasted). The spices are cooked when the mix powder is fried in oil when making a curry.

no i didn't suffer i like the hot ones its really tasty as well the only i did was put one teaspoon of chilli powder instead of two and replaced the other teaspoon with two fresh Naga chillies.Sweat behind the ears job haha

Good question. No in this case they are not pre roasted. Doing so brings out the essential oils for a more pungency, but the flavour deteriorates quicker over time than if you had not roasted them. You want to be able to make your mix powder batch last.

+CLARKEa100 Clarke, yes, if you can't get the seeds or don't have a grinder or pestle&mortar, then use the bought pre-ground ones. Freshly ground has better pungency though.

The million dollar question though? What is "Mild Madras Curry Powder" made from? As we also need to match this product if we are to replciate the recipe. My supermarket simply sells "curry powder".

It's most likely the same or very similar as what your supermarket sells. Just how a middle of the road curry powder has tended to be labelled in the UK.

Ive just made the base sauce first, then last night used that to make a Madras, like I say used Soy Oil for these as its all I had at the time, but if theres a better oil to use will buy some.
