Okinawan Sweet Potato Haupia Pie is by far my favorite dessert! My Aunty brought this dessert one day for family dinner, and I practically ate it all. It’s a unique dessert with three layers of heaven. A crunchy shortbread crust, layered with Okinawan Sweet Potatoes, and topped with a Haupia layer. #okinawansweetpotatohaupiapie #purplepotato #dessert

Ingredients:
Shortbread Crust:
2 cups flour
1/2 cup sugar
1 cup butter, chilled
3/4 cup nuts (optional)
Potato Filling:
1/2 cup softened butter
1 cup sugar
2 eggs
2 cups mashed sweet okinawan potatoes
1/2 cup evaporated milk
1 tsp vanilla extract
1/4 tsp salt
Haupia Topping:
1 can (14 oz) coconut milk
1 cup milk
1 cup water
1/2 cup cornstarch
1 cup sugar
Whipped cream (optional)

This was bomb. I bought some of these purple sweet potatos and was googling if anyone made a sweet potato pie with them. I was thinking like a pumpkin pie or something but then I found this recipe. Just made it yesterday and turn out delicious. Unique and beautiful desert.

Hi There!! Finally got to try you recipe!! My error was a blessing in disguise.. I forgot to add evaporated milk, vanilla into mashed Ube. I finished the rest according to your video presentation... result?? THEY LOVED IT!!! Next time I plan to tray macadamia nuts.. mahalo once again for sharing

would love to make this recipe even if it is from 3 years ago. The cornstarch stuff in Spanish is called mizena , and it's delicious so seeing this recipe I literally want to try it .

Made this yesterday and it was DELICIOUS! Absolutely love this recipe - bookmarked for future use! As I was enjoying it, one thing came to my mind: would be amazing to add some tapioca to the haupia top, might give it a try next time. Anyway thank you so much for sharing!

Cool job 🤙🏿 I was wondering for the haupia can I substitute it with rice milk, oat milk, or another plant based milk instead of coconut milk? Just in case I want to make these for people who have nut allergies. 🙏🏿

Hmmm I haven't tried substituting it with a plant based milk. Try it out but just be careful when thickening the "haupia" part. You might need to add in more cornstarch. I hope that helps :)

Haupia is a coconut pudding so possibly look for a vanilla pudding recipe (vegan pudding if not into cows milk ) and substitute in place of the Haupia .

Those sweet potatoes are very sweet. Coconut milk will make it creamy. Add your flavors like ginger, vanilla extract, pumpkin pie mix, cinnamon etc... Whatever you like sis.

Unfortunately, the dessert did not agree with me. It quickly made sick and I threw up. I believe it was all that cornstarch; I've never seen a recipe use as much as a 1/2 cup.
