Love how Claire is very respectful. Obviously she’s a pro and knows all/most of these things, but waits for direction and doesn’t feel like she needs to prove herself or get defensive.

Vallery just has a more teacher-ish presentation style, so Claire adapted to that. Other guests have come in with more of a peer-having-fun style, probably bc they know Claire or have worked with her before.

Claire is so amazing, supportive of other fellow bakers. I look forward to Thursdays just for the bright spot that Claire is in everyone’s lives. Besides doughnuts that’s a win win.. ice the doughnut with Vinny’s editing and you’re golden. It will BOB up in the oil, and Bob’s you’re uncle.

Claire isn't "pretending not to know" stuff, she's just listening to her guest and learning how she bakes. People in the comments sound so condescending towards Vallery :/

Vallery is also teaching the viewers...she's addressing Claire but she's teaching us too. Your host may know these things but your audience may not. They were wonderful together!

i think some people in the comments are failing to realize that while the instructions are for the viewers, they are also for claire. she has guests that are more knowledgeable in other areas than she might be so its good to give them the time to shine while she simply follows. id rather her respond to the instructions and have minimal things to say than her asking questions or diverting attention from the recipe because it would take away from the guests and the valuable and fun bits of information that they have about baking. in the end while shes the host, she is also a person who seeks new things to learn so its cool to see what she might take away from each experience she has on dessert people :) thats what makes collabs so fun

I agree with this sentiment, though I do believe Claire does actually know how to make these types of doughnuts (we've seen her make yeast doughnuts on the channel that won't be named and has spoken about cake doughnuts like these before). It's not that she isn't knowledgeable, but rather she's showing respect to the guest because it's their own recipe and she's taking in their way of doing things. But you are right. If Claire was always interjecting with questions the way someone else in the comments wants she runs the risk of interrupting Vallery, butting in awkwardly or centring herself which wouldn't be a good look. That Claire is so accomodating of the guests, lets them take the spotlight and allows them to talk and explain their techniques uninterrupted on her platform is fantastic. What she's doing here is perfectly fine.

Right! She might know what is being talked about but its always good to hear how something can be done from another persons perspective (like when Vallery said not to twist the round cutter and Claire reacted instinctively by twisting it by accident), they both know how to make the same baked good but they have different ways of approaching it.

I made this last weekend and it is so good! I thought I was going to fail for sure because I have never made doughnuts let alone deep fry anything. It is so easy and fun to make. it is fluffy, tangy and delicious! One thing I'd suggest is to double the recipe or triple. The batter for one batch (yielded about 8 doughnuts) is very small the paddle attachment doesn't quite reach and I wasn't confident it was mixing well. It still came out great but next time I'm definitely making a double or triple batch. For mixing reasons and also because it is so so delicious that one batch isn't gonna be enough!!

My Grandma and I make cake donuts together for Christmas every year, and have been doing it since I was 9 or 10. We have one recipe that has a little bit of lemon zest in it and they are so good! We usually make the dough the day before, and leave it outside on the porch over night to firm up. (Living in the countryside in Norway, that’s where all food/leftovers are stored during winter 😂)

I feel like Vallery was explaining it step by step for the audience so they knew exactly what to do, but by using Claire as an audience proxy, so it was kind of funny and weird to hear her congratulating Claire on doing little things well since I think we all know she's like a very accomplished pastry chef,

The comments of how Claire is “pretending not to know this stuff” are weird and ring of privledge. Claire is just listening to her guest and *their* recipe and how *they* make doughnuts. She’s learning how others may approach recipes and recipe development. You can always learn new things. So thank you, Claire for having Valery on the show, genuinely learning and listening to other pros and “dessert people.” I really love old fashioned doughnuts

Your first line sounds like some woke crap (privilege???), but the rest I do agree with. What does any of this, or the viewers' take on it have to do with privilege? I did also get the feeling that maybe she was acting a little, but I figured it was just the way she knew how to follow and respect the methods of her guest while making a video for others to learn from. If I was in Claire's shoes, I likely would have said, "oh that is not how I have done it in the past, let's see how it works out." Luckily, I don't make entertainment or instructional videos, but not commenting much made it seem professional and made for a "cleaner" video because the audience could focus on the guests methods....obviously the point of the video. My favorite is the old fashioned plain, no glaze.

@@hannahnairn581 I haven’t spent a ton of time in Berkeley so don’t have too many, but one of my favorites is to get Samosas with Tikka Masala sauce for dipping from Barbarian Pizza Lounge (now called Barbarian Grub & Ale). Their chicken tikka masala sandwich is also super yummy!

I was ACTUALLY just daydreaming about homemade old fashions this morning before getting ready for the day. Then I remembered it's Thursdays (and we all know Thursdays are for dessert!) I see Claire with Vallery on the thumbnail while pulling up KZfaq, this is a daydream come true ! I appreciate the recipe Vallery created--I do need some quick delicious recipes, and this checks out 1000%. I know that I'll be making these for sure if not today then absolutely tomorrow. This is so silly, but I almost cried when I heard that "dessert people" and the animation showed people arriving it's been a heck of a year and I hope that we slowly, but surely, return to life as we knew it.

These people are very kind and generous to share the valuable and helpful information on making homemade sour cream cake donuts. This video is well made and easy to follow, with the recipe included. Without good videos like this one, I would be like a donut; I would be "GLAZED AND CONFUSED." Yes, pun intended, but I am now inspired to make homemade donuts. Love the idea of glaze with added melted butter, milk, powder sugar, and vanilla extract. An idea for this same glaze would be to mix in some cinnamon. You can also have chocolate, strawberry, or maple flavor glaze. Maybe coat the donuts with strawberry pink color glaze and immediately add rod shaped candy sprinkles before the glaze dries for a "HOMER SIMPSON" donut. Like the taste of chocolate covered strawberries, combine half strawberry flavor glaze and chocolate glaze for a spectacular flavor you will not likely find at the donut shop. Of course, with leftover dough, maybe make "donut sticks" that are not more than 1½ inch or 3 to 4 centimeters wide.

My son just got a job at a local apple farm, helping to make their fried cakes on the weekends. He comes home smelling so good! I will try making these for sure. I like mine w/ cinnamon & sugar, & a mug of warm cider. 😋

My mother grew up during the depression so by necessity was an early creator/adopter of environmentalist practices. When frying donuts, she used saved bacon fat, and instead of using paper towels, she drained the donuts in cardboard egg cartons. The donuts were always coated with sugar, which was done by one lucky child who got the first taste. I’m definitely going to try this recipe, as hers has been lost.

The bench scraper needs marks from the edge to the handle so you can see how thick stuff is as you cut it! Love these ladies!

Laughed pretty hard at how the powdered sugar was going all over the place. Good video, I really like the "Dessert People" series.

I love the seemless cut when you were doing the powder sugar for the glaze. It's like "don't notice the 2 different sifters for the sugar! Because we needed a larger one" haha ;) But seriously though, nice cut. Haha

Best donut I ever had: apple cider donut with apple cider glaze We were visiting upstate NY from Utah and the apples were fresh and in season....soooooooo good. I remember the flavor and this was like 7 years ago!!

OMG OLD FASHION GLAZED!! These are my favourite!! As a Canadian I can say that the old fashion glazed are my favourite tim hortons donut. Definitely want to make these at home!!

Claire, you can adjust the speed of your mixer super easily by removing the back cover and adjusting the screws. I had the same issue with mine throwing flour everywhere.

I used to make Korean twisted doughnuts now and then, but I've not felt the desire to heat up a whole lot of oil in a long time. This recipe is making me seriously reconsider that problem... You can tell after the first flip this has been tested to perfection.

Growing up we used canned biscuits and would punch the whole with a bottle cap and then fry them. The glaze was powdered sugar, vanilla, and milk. So good.

Got Claire’s cookbook yesterday and today when I saw the “Thrice-Baked Rye Cookies” I knew I had to try them. Just finished making them and they are delicious! And also a very unique experience, kind of a cookie/brownie and having a very interesting and good flavor.

I loved the original Dunkin' Donuts old fashioned doughnut with the handle. It was their namesake doughnut designed for dunking in coffee with the handle that made it look like a "Q". It had mace or nutmeg in the mix for a rich flavor and mouth watering aroma but no glaze. They stopped making them sometime around 2003 when they went to mass production because they couldn't make the handle, only round cake doughnuts cut by machine or liquid batter machine drop doughnuts. I spoke to a manager that ran a Dunkin' shop back in the day. He told me their secret to the crispy outside was they double fried them. First fry was to a light golden brown, about where you had yours in the video, then rest for about 2-5 minutes and finally the second fry to get the darker outside with a crunch to hold up to the dunk. The closest commercial mix available is the Double M from Golden Dipt. I will have to try this recipe with added nutmeg to see how close they come to my memory of the OG "Dunkin'" doughnut. Thanks for the video.
