Grandma hands. I enjoyed her demeanor more than the recipe. She's the last of a dying breed of nurturing strong intelligent loving. Strong Black women. The nucleus of the. Family. Teaching life lessons for generations to come. I love her

@@MaeMaesHappyTable You bet. I used to help grandma cook. I was her favorite grandson. And I was the baddest of four siblings. I think God told her I need the most help. She was the glue, the center. Nobody had the nerve to tell her how to do something. She survived the great depression, WW2 etc. She raised me while momma worked. I came home and went right to her apartment before going to mine. She knew how to gather wild foods. And which mushrooms were good or poison. I'll have to look at the rest of your recipes to see how you do them. By keeping you close at her side lucky you to get that quality time I bet you're a great cook and have great wisdom. My mother would put her collards in the freezer for about an hour in the warmer months to "sweeten" them. It made a big difference, took any bitterness out.

My Grandmother taught me how to clean greens and cook them without me knowing it was a cooking lesson. She would always say come over here and help me pick these greens. She started me doing that when I was 9, it wasn't until I was a teenager that I realized she was teaching me how to cook Soul Food. Her favorite saying was "The way to a man's heart is through his stomach" I'm so happy she taught me how to cook. I have 2 daughters and neither one of them can cook the way Mama does, my youngest one wants me to come and live with her and her little family, her husband is in agreement with her. I'm thinking about it because I miss her and my grandchildren.

Girl I'm trying to remove my oldest daughter. She don't like cleaning after herself.🏠 Her daughter will be 13 yrs old this coming Oct 11th 2022. Lord she's lazy jus like her mama. Ready to clear my house out. So I can fix up my guest room, and turn the other room into a office. Been here 2 yrs now. The baby girl just graduated from college with a bachelor degree in Psychology got her own nice condo brand new car no kids very independent. Don't know what went wrong with the oldest sis. Smdh🤦

Yeah, women those days usually didn't work outside the home so I guess their hobby was cooking. I was a tomboy and would rather be outside with my dad. Cooking was boring to me. My dad was the chef 👨‍🍳 in our home. He knew my mother didn't like to cook, he still married her. I cook, however my husband is a grill master. Many men cook and don't mind. Thank you LORD. I'll clean, organize, sew, manage the house and cook a little, but I certainly can't like those grandmothers from the 50's.

I know two woman who can cook, however husband's no longer there. I would prefer to say the one thing a wife can do for her husband that no other woman can do is pray for him earnestly. He can get his physical food anywhere.

That is an old Southern saying; my Mom was from Rocky Mount, North Carolina, and I always heard my grandmother use the term Pot Liquor. The old folks believed that there was medicinal value in that broth, all the vitamins we're in it.

My mom always added baking soda, she doesn't cook anymore, she's 96. But we were taught baking soda takes the bitterness out, but i also think it shortens the cooking time. Thank you for sharing this recipe. You are a great cook!

I have used a little bake soda before but now when washing my greens for my second wash I add a little baking soda in the water, my 1st wash I wash, one leaf at a time and you are right it takes out the bitterness and shorten the cooking time.

Just giving a tip… Baking soda may act the same as salt. Salt is usually used to wash/clean greens to help get rid of the insects that may be still on them. Baking is used to help tenderise your greens(turnips/collards) that are not easy to chew. It also helps kill the taste and add about a tablespoon of sugar

You're absolutely right. Collards have changed a lot in the taste and I didn't even realize it. I just knew that I had to do a lot that my grandma didn't do to make them taste good. My grandparents grew their own collards in the yard and they were delicious. The grocery store ones are definitely not the same.

Yes they mass-producing collards and growing year round. Like Ms Mae said the best collards didn’t grown year round. But now the browning greens in hot houses and spraying some green chemicals on greens. We never had to wash greens 5 to 7 times trying to get the green coloring out of the water. My Mom cook her greens just like Mrs Mae.

I agree that collards seems to have changed!! Thanks for sharing! I must admit that they changed. I grew up in southeastern Florida.. Ft. Lauderdale, Back in the 50s,60s and 70s; we would pick over each bunch at least four x each time before soaking in cold water, each time so make sure that each leaf has been thoroughly because of the thick and rich soil that our collards, turnips, mustard green had to be soaked..Thanks for sharing your style of cooking is definitely bringing back precious memories!! Hi Mae Mae…I’m 79 yrs young. I love your cooking and recommend your page to everyone young and old (also share). I remember two dishes that my grandma made and never learned to make. One was Tea Cakes and the other was sweet potato pudding or bread…the sweet potato bread was made in a sheet cake pan without a crust. Hopefully you know how to make these so I can share with my family!!! Again, I love your thorough and careful explanation during your cooking shows….Love, Dorothy♥️

How do you fall in love with someone before they even finish their presentation? This dear lady reminds me of everything that was so precious to me and my siblings when we were growing up. It's almost as if I am in the kitchen listening to my mother teaching my sister how to cook. It's amazing how much love they injected into both their cooking and instruction. All I can say is God bless her. She remind me of my mama in the kitchen cooking. I'm in my 50's and I'm still learning things in the kitchen. My mom taught me to cook at 7 years old. And I tell you having those natural born Southern mama's is the best. My mom was born in Clarendon Arkansas in 1932. The food was amazing and cooked with lots of love. Thanks for sharing with us.

I know these are some good collard greens...my mother in law was from South Carolina and she was known to be one of the best cooks around Rhode Island ..thank God I was able to get her recipes..I have a lot of her recipes and my children,my grands and friends all love my cooking thanks to her...I also have some of her cake recipes but sadly sometimes I have a problem with her chocolate frosting that takes 3-4 hours to cook so I was wondering if you have a good recipe for that...thank you and I will continue to enjoy your KZfaq...Have a wonderful Thanksgiving.

Thank you so much for the demonstration on how you cooked collard greens. Just like the way my grandmother cooked her greens. You could smell the greens coming through the door. And she cooked hot water corn bread to go with the greens. It was so delicious. Thank you for sharing. I am going to try your steps in cooking my greens the way you did. I would like more cooking greens like turnips and other vegetables.

Put your Search in for Sweet Potato Pie on KZfaq. There are dozens of people doing SPP, believe me, especially around Thanksgiving. Remember tho, EVERYONE has their own way of doing it......there will be different recipes.

I like to cook collards muster and kale green all together with smoked Turkey neck and oxtail and gravy and jasmine rice and corn on the cob with buttermilk corn bread and cherry koolaid.

I'm so glad collard greens are coming into their own. I'm from the south, and my children were born and raised in the north, so my grown daughters don't make collard greens for their families, but I love them and still make them for myself. They all seem to have problems with digestion and food allergies, but I'm going on 84 and hope I won't be jinxing myself when I say I'm just fine. I know it's the collard greens that makes me feel young and healthy. I do have one daughter, my youngest, who makes them and loves them, just like me. She buys her collard greens at a farm market.

Pat Cavanaugh thank you for watching my video and blessing my spirit with this wise comment. I believe collard greens are very healthy for you. I've been eating them all my life. I live in the south and my husband and father-in-law raise some of the collards I cook. The way they are prepared makes a big difference in how the taste. I sometimes just add a couple tbsp. of cider vinegar and no meat, when I feel my digestive system needs a rest. I will definitely watch your hen and dressing video... you are lucky to have the greens fresh from the garden. Keep on making your cooking videos and don't forget cornbread, corn pudding, and candied yams, for Thanksgiving. Blessings on you and your family.

I will be using all the dark leaves off cabbages, broccoli etc from now on..with vinegar olive oil n cider..and our NZ puha, which we use in boil up. I know these more bitter greens are great for the liver. The puha is closely related to the milk thistles which is specifically used in herbals for the liver. Which all in all helps our digestion. Well done Pat. You're a nurse as well as a fine cook & I imagine a wonderful mum n granma! 😊

Hello, Good afternoon, I enjoyed listening & watching you prepare your Collard greens. You reminded me of my grandmother in so many ways; it was a true pleasure. I learned to cook from her & Papa. I do the greens very similar but I put some bacon in a huge cast-iron skillet, let it cook, remove when done & add greens,onions, sliced hamhocks, cook down & slowly transfer to a taller pot like the pot ham hocks were boiled in. Then, to cut down on your cooking time, put a lid over greens & cook. With the lid covering pot, all the steam stays in pot & cooks in less time. Jesus loves you & so do I! Keep up the good cooking! I wish I could just jump through screen and give you a big hug! You remind me of my grandma so much. I lost her a few years back when she was only 67. She was everything to me. I try to remember all the recipes and just coming across your page warms my heart. The way you cook your greens is exactly how she taught me 😊 She was from Bishopville, South Carolina. HAPPY HOLIDAYS QUEEN MAE MAE! I followed your instructions and came away with an awesome pot o' greens!!! The only change I made was I used smoked turkey due to some family members don't eat pork, (however, I did fry the greens in bacon grease, that I ALWAYS have on hand, shhhh..LOL) and no jalapeno because I'm allergic..other than that..THESE WERE AWESOME!! That's what I'm talking about. The coziness of that kitchen sends smells you don't much experience today. I try to hold on to a cozy kitchen, with my lilac colored table cloth and sheer lilac curtains. To top it off, I still cook lamb, collards, pinto beans, and my husband's favorite, "stew meat and rice, and black eyed peas and collard greens." He loved that so much along with the corn bread. I can't believe my baby is gone. Bless you and everyone on this blog. It is such a positive site, with everyone speaking so well and so kindly of Mae and what she brings to the table. Her cooking makes you hungry doesn't it?

@@Graced4This You're right. Remember how it use to be when your mom always had something good smelling in the kitchen, no matter what time of day or night. My mom became the cookie mom of the neighborhood, and all our friends from school who lived in the nearby would stop by our house on their way home for cookies, cake or pie. My mother loved it. those are times gone by, but I try to recapture it by always having something that anyone that stops by for any reason, will see something that they want and could not resist. Come on over.

She knows what she’s doing. She can cook💯♥️ My grandmother and Mom taught me how to cook at age 10, I learned how to prepare southern food because my family is from the South. I don’t use salt in my ham hocks though they are already salty. Fried Collards are so good! Her kitchen is clean, I will be subscribing! She’s the best I’ve seen.

Greens are so good. I don’t like making them until the frost hit them. I was raised up on them turnip greens, cabbage and all types of vegetables we had such a big garden in the south, (North Carolina)

Lillie Carr Thanks for watching my video. You're so right collards are tender and more flavorful and easier to cook after the frost have falling on them. I live in the south (Alabama) grew up in the country, where my parents grew all their vegetables, raised chicken and hogs etc. we had a smokehouse where my dad smoked certain meats. It's a big difference in the taste of foods then than it is now. Once again thanks 😊

I remember going down to the creek with my Grandma and she would pick Polk Salad. Have you had them? I have a question about cleaning greens. I wash mine really good and then I soak them in the sink with water, salt and vinegar. I don't remember where I got that from but that's what I do. The vinegar is supposed to keep them from being tough. Please advise.

There is nothing like good collard greens. my grandmother from Alabama was the best cook and she cooked for other people. my family in the south they were some cooking people. I am 67 years old and I've been cooking for some years and I am one that is a creative cook I'd like to do spins on different dishes southern foods is the best comfort food you can ever have yes and you eating those collard greens and cornbread with your hands, you got that right. and having that good old creamy macaroni and cheese that was baked. Oh my goodness. and those candy yams, oh my. that good old baked chicken. I hope I'm making somebody hungry. I'm sure getting hungry myself or just have that good old Southern Fried Chicken when you smell that chicken frying, oh my goodness. the aroma is out of this world. O my!!! My Mother was a excellent cook she made that good old baked chicken and dressing oh my goodness and her cakes her pound cakes oh my mercy and she made the best macaroni and cheese yes oh yes she sometimes will have black eyed peas with little okra in it and we will have that good old Fried Chicken this is on Sunday after we come home from church my father was a bishop and all I thought about when I was at church is that good old home-cooked meal that my mother had prepared started her dinner on Saturday night. you guys know how It was years ago.

You are the best Southern Chef/ cook I’ve learned from since I lost my mother to cancer in 1985. My mother cooked similar to you. I grew up with a large garden every year. You’re so right about greens tasting better after the frost. I would ask my mother how to season foods and she said she used her hands for the amount. She explained to me on the phone how to make biscuits. Well, mine turned out hard as a rock. After that she would add all the dry ingredients together and put in a bag for me. After that I was able to make great buttermilk biscuits for my children.

I now live in the San Juan mountains of Colorado and was given a nice mess of collards that I'm looking forward to cooking. My father's side of the family is from the hills of N Georgia and watching you prepare that food brought back some great memories of my Grandma in her kitchen and I can smell those greens cooking all the way out here in Colorado !!! Southern girl, you nailed it! My Momma and Big Momma are from the South and this is the way I was taught. I'm glad you set the record straight, because there are a lot of counterfeit videos on KZfaq informing the public on, How to cook 20-30 mins. collards. Yes Ma'am..I'm from South Florida and that's how my Grandma used to do it sometimes..And yes we preboil our smoked meat just like you did..I aslo use chicken broth or the chicken better that bouillon in my greens..I also have that very same pot that you have..I call it my collard greens pot..lol..and everybody know..the only thing I cook in that pot is collard greens..be blessed and have a great day....

As a baby boomer, this is the only way I know how to cook thanks to my mom, grandma and great aunt. I still cook old school southern way even though I live up north (I still cook chitterlings and oxtail soup).

Oxtail soup is a southern thing? Wow. Mom made this when I was real young but then stopped making it. Hmmm. I didn't know half of the stuff I grew up eating were southern until recently.
