I went to make this a little bit earlier today, as it reminds me of my late grandmother, who served this often. After I got started, I realized I didn't have any regular diced tomatoes in the cabinet, so I used a can of fire roasted Rotel instead. Other than that substitution, I followed your recipe exactly. It came out delicious. It was a little more spicy than my grandma made because of the Rotel, but it was still very good. Thank you for sharing the recipe. The next time I put this together, I'll be sure to have some regular diced tomatoes in the pantry.

I was raised on macaroni and tomatoes!!! It's been a favorite of ours throughout our family. My mom cooked it without butter and onions but I add onions. We all love it soo much!! It's very easy on the budget as well. Thank you for sharing this! You both are very lovely ladies and Kathy, you are right. Starland does have the voice of an angel. I have made this all my life but never put any butter in it…I am going to do that next time I make it. I put Lawry’s Seasoning Salt in mine, and that gives it a nice flavor in my opinion. I love love love Macaroni and Tomatoes!

I still eat this, but I grew up with this made more simply Just macaroni, canned tomatoes, margarine or butter put in after pasta is drained, salt and pepper.
