INGREDIENTS:
2 medium red onions (or 3 small ones)
1 1/4 cup (300 ml) water
1 1/4 cup (300 ml) white vinegar
3 tbsp sugar of choice (see notes)
1 tbsp sea salt
1/4-1/2 tsp red pepper flakes (optional)

Do you have to keep them refrigerated once ready? Can the same brine be used for making another batch or do we have to discard it n make again?

Do you have to cook the water? And how long do you have to wait for eating and how long can you hold it. 😅

When I make this I just heat the water and vinegar hot enough to melt the sugar and salt. It doesn’t have to boil. I add whole peppercorns to the jar instead of pepper flakes and also toss in four or five whole cloves of peeled garlic. Best to make it 24 hours in advance. They’re delicious. They’ll last two to three weeks in the fridge.

works with warm water too, cold one too, but the hotter the water the better for the flavor~
