PLANT BASED SAUSAGES
Begin by chopping your brazil nuts and farro in a food processor before adding the other ingredients
Ingredients:
1 cup of cooked white beans
1/2 cup of cooked farro ( if you want the sausages to be gluten free substitute farro for wild rice)
1/4 cup of Brazil nuts
1/2 cup of chopped brown onion
1/2 cup of mushrooms
3 chia eggs (3 tbsp of the ground chia seeds + 1/4 cup of spring water)
1 tbsp of tomato paste
2 tsp of all purpose seasoning

2 tbsp of creole seasoning
Once you have added all the ingredients into your food processor chop them
Only pulse / chop, rather than run the machine continuously as you want the ingredients to retain texture rather than turning into a paste.
If your mixture is too sticky add a bit of flour ( we used 2 tbsp of quinoa flour )
Add the mixture into the refrigerator for 30 minutes
Form the sausages with your hands
Once formed, roll the sausages in parchment paper and twist the ends to secure the sausages
Place the wrapped sausages in a steamer basket/pan and steam for around 35 minutes
Once cooked, you can serve immediately, pan-fry or even grill for a crispy result!
After steaming the sausages you can also refrigerate overnight and they'll become more firm in texture
