This Pork Kakuni, braised pork is perfect for those who are concerned about the amount of fat. In the recipe, the fat is reduced as much as possible. Serve it piping hot and enjoy the delicious Kakuni!
How to Make Pork Kakuni

(serves 3~4)
500g Pork Belly (1.10 lb)
30g Ginger (1.06 oz)
A green part of Naganegi - Long Green Onion
- Simmering Stock -
100~150ml Sake (3.38~5.07 fl oz)
450ml Warm Water (1.90 us cup)
5x5cm Kombu Kelp (2x2 inch)
2 tbsp Raw Sugar
2 ½ tbsp Soy Sauce
1 tbsp Mirin
2 Soft Boiled Eggs
6 Boiled Green Bean Pods
Karashi - Japanese Mustard
Otoshi buta - Japanese-style drop-lid
(Round parchment paper with a half inch hole in the center can be substituted for otoshi buta.)

角煮は食べたいけれど脂が気になりますね。今日は脂をしっかり抜いた美味しい豚の角煮を作ります。熱々で食べてくださいね。
豚の角煮の作り方

<材料>3~4人分
●豚バラ肉かたまり500g
●生姜30g
●長ねぎの青い部分1本分
煮汁
●酒100〜150ml(肉を柔らかくし、肉の臭みも取る)
●ぬるま湯450ml
●出し昆布5cm角1枚
●きび砂糖大2
●醤油大2と1/2
●みりん大1
●半熟ゆで卵2個
●茹でたさやいんげん6本
●からし
落とし蓋(ない場合はオーブン用ペーパーを鍋に合わせて切り、中心に直径1.5cm位の穴をあけたものでも良い)

500g de Barriga de Porco
30g de gengibre
A parte verde do Naganegi - que é Cebolinha Longa
- Caldo Fervente -
100 a 150ml Sakê
450ml de Água Quente
5x5cm de Alga Kombu
4 colheres de sopa de Açúcar Cristal
5 colheres de sopa de Shoyu
2 colheres de sopa de Mirin
2 Ovos Meio Cozidos (4 minutos)
6 Vagens Cozidas
Karashi - Mostarda Japonesa
Otoshi buta - "tampa de peso" no estilo japonês
(Um círculo de papel vegetal com um buraco de 2,5 cm no meio pode subtituir o otoshi buta.)

I just made this tonight. Followed the recipe almost exactly (except I didn't have any green beans, so I swapped in some steamed yu choy since that's all I had). All in all, it was pretty amazing. I'm definitely saving this one in the memory banks, so I can impress all my friends next time we have a dinner party. B-) Thanks, dog!!!

茹でた汁は冷まして固まった脂を取り除いて、カツオだしと醤油、ごま油などで美味しいスープになりますよ。春雨やわかめなどを入れて中華風にしています。豚のだしはカツオだしととても合います。

Mirin is a kind of rice wine similar to sake, but it has a much higher sugar content. It is one of the essential ingredinets for Japanese cooking :)

I made this for dinner yesterday. Took quite a lot of time but it was worth it! Had to improvise the Otoshi buta, but I got all the ingredients, even the Kombu Kelp. Very delicious :) Thanks Francis and Chef

This looks similar to a Vietnamese dish called thit kho trung! Looks yummy. :)

yes! english name is braised pork belly. the vietnamese one is taken from the chinese as well. Each one uses slightly different sauce base. All use ginger of course.

You can use pork loin, but I recommend Boston butt as it has a higher fat content, making the meat more tender :)

this is currently what I am doing. I already cooked the meat for an hour and 30 minutes. I desperately want it to hurry up and cook. Im drooling at this point watching the video over and over for the directions.

Am I the only one who feels sorry for the dog lol. He's very well trained I must say XD. But I can't help but feel sorry for him being around all that yummy food. I wouldn't be able to do that :/ I would feel like I was teasing the poor thing.

He did from time to time. Chef can sometimes be seen in the outtakes snitching him a little bite. Francis was well loved and well taken care of.

Does anyone else feel bad for the dog? It just has to sit there and watch as the pork's being cooked. Remember their noses have thousands of times more scent receptors than our own... that has to be torture lol.

I prefer to have the nice caramelized flavor in the braise instead of getting washed away. Therefore, I'm not a big fan of frying/browning the pork, then blanching and washing it afterward. I know those steps are required to remove the porky smell, but it also washes off all the flavor from the browning process. Instead, I would blanch and wash the pork first, pat it dry, then sear it in a hot pan. Once its nice and browned, simply drain the fats and braise it without washing the flavor away any further. A certain famous chef once said: "no colour, no flavour!".

I kinda understandable what you say but you haven't eaten this KAKNI yet right? This is one thing. That's another. it's one of the hundred way to cook pork in Japanese cuisine. what I don't like is you making it sounds like Japanese don't know about cooking pork at all. we eat porks the way what you say too but KAKUNI is also delicious too. if you have any chance to eat it, try it. you can't say that till you've experienced

Usually for kakuni you don't need to wash it out like she did. I think she did that for the sake of a healthy version. I agree with you, I think I would skip on the washing part lol. It's more flavorful that way!

Chef san, I just wanted to tell you I'd made this Buta no Kakuni a year ago and turned out wonderful. Not so oily and tender and just tasty. I am Japanese living in the USA for nearly 40 yrs and my half Japanese son loved this. He always asking me to make Yakibuta on ramen in Japan. I'd made a lot of your recipes and loved every one of them. Please say hello to Francis kun. I have 6 dogs and love them all.

I recently made this for my family. You're right. it IS a lot of effort, but it is an amazing dish. EVERYONE loved it. The pork is super tender. We didn't need anything like a knife or whatnot to cut it. It just breaks apart as you cut into it. It was an incredible dish. And many thanks to Chef, for showing us how to make it.
