Let me show you how I make iconic Punjabi Saag and Makki di Roti. Some foods are just central heating for the soul and this is one of those meals. Thick with creamy greens and butter, this luscious Saag, or Sarson da Saag is rocket fuel for winter evenings. It comes from the land of the five rivers, Punjab. The soul food of this northern region of India and Pakistan.
You can make it with any leafy greens. I like mine with mustard leaves, spinach and fenugreek leaves. Back in the 70s when my mum came to the UK, her Punjabi neighbour made her Saag with broccoli, tinned spinach and Brussel’s sprouts because they were simply cheaper and more accessible.
The moral of the story is, Saag loves you no matter what’s in your fridge, cupboard or freezer.
In any case, the veggies get 5 star treatment with copious amounts of caramelised onions, garlic, ginger, chillies and butter.
