Sourdough Starter with Grapes
The secret to success is finding organic grapes with yeast dust on it.
This is the white power most people try to wash off.
Pick about a dozen grapes and place in a non metallic container.
Add one cup of whole wheat flower - all purpose flourr will work too.
Mix with grapes to spread yeast through-out the flower.
Add one cup water.
Stir until well mixed.
Cover tightly and set aside for one day.
Next day stir once or twice.
Cover and repeat for three days.
On the third day, remove grapes.
Pour off one cup of your sourdough starter.
Add one cup of all purpose flour and water if needed.
Mix well.
Consistency of pancake batter is good.
Repeat process of a couple of more days.
Your sourdough starter is ready to use!

This is the way they made bread in ancient Rome except they used either buckwheat or spelt flour - not only for the starter but also for making bread itself. Going to try it, then I'll have myself a breakfast from ancient Rome: sourdough bread (broken into rough pieces) and figs (also broken into pieces) and drizzled with honey and poppy seeds.

I do the same thing but use raisins water and sugar. Once it starts fermenting I remove the raisins and add flour. I have a batch going now using fresh grapes. I sometimes make pizza dough with flour, sugar and water. Just cover with a cheese cloth and wait 24 hrs and it will start bubbling. Then you can add more flour, oil and salt.

Thanks, Garry. Everywhere else I have read about this, they make it sound so difficult. Now, onto homemade sourdough bread!

Hi there, I'm on day two and it's looking good. Thank you for this. My question is: on day 3 when you pour half of the starter out, what do you do with the other half?

Thank you, this looks amazing! When you say Repeat the process for several days, do you mean add all grapes Again for 3 days doing All you showed for maybe 6 days total since "repeating the process" ? Is it not ready for use for 5-6 days?

It’s the yeast that is growing on the grapes that causes the magic :-)

Can I use this starter to ferment alcohol? What percentage of alcohol they can resist?
@yunhin9631
@yunhin9631 5 жыл бұрын
Yeast can produce alcohol if they are in there anearobic respiration prices which is breathing without oxygen, so you can stop worrying about the yeast dying in the amount of alcohol that's in the starter, in fact they created it, only anaerobic organisms can produce alcohol, such as yeast
