What do the pros eat? At the 2013 Tour de France, we spent the day with Team Saxo-Tinkoff Chef Hannah Grant and whilst we were there, Hannah shared her rice cake recipe with GCN.

Nearly every team now travels to the Tour de France with a team chef, and every day the chef makes batch of rice cakes for the riders. When we spent the day with Hannah Grant (@dailystews on Twitter) we learned how to make the rice cakes that fuelled Alberto Contador and Roman Kreuziger to 4th and 5th at the 2013 Tour.
It's probably easiest to cook along with Hannah and adjust your ingredients as you go as Hannah is cooking for 8 hungry pro cyclists. But, for starters, here are the ingredients that she uses:
All measures are approximate, and to feed 8.
Short Grain Rice - 1kg
Coconut Milk - 2 tins
Apple Juice - 1 litre
Water - 1 - 2 litres (approx)
Golden Raisins, Dried Apple Slices, Brown Sugar and Cinnamon to taste.
CAUTION - Rice cakes have a particularly short shelf life.
Huge thanks to Hannah - give her a follow on Twitter @dailystews

Divide everything by about eight, so that's: 125g rice 125ml apple juice 125 - 250 ml water Some coconut milk... Depends on the size of the tin you get, and adjust the amount of water you add to suit this too.

Tried this just yesterday, great recipe. Pro tip: try glutinous rice. You'll have to boil it in water or broth for a loooooong time, but it'll have a nougat-y consistency when cooked as opposed to grainy like steamed rice. No need to freeze :) slice into bars, wrap each bar separately in Japanese paper lined with roasted flour to keep the bar from sticking to the paper, and you're done. Source: I'm Filipino and I've cooked and eaten rice meals all my life.

I just made this recipe and it's awesome! Cooled it overnight and this morning I took a piece with me on a quick 60k spin just so I could try it out and it was great! Had another small slice with tea for a snack when I got in! Will definitely make it again, but next time I think I will swap the dried fruit for something savoury... maybe bacon;) Thanks GCN!

Brown rice is lower GI, but white rice is quite high GI. It's very high in starch, which does need to be broken down into simple sugars by your digestive system, but this is no bad thing. If you need an instant glucose hit, eat sweets or a down a gel.

Great video, Hannah. Thanks for a great recipe/recipes once again, its motivated me to them out and to train hard/smarter. I would add 4/5 can of Mighty Malt/1 litre Carrot juice, instead of 1 Apple juice because you already added Dried Apple Slices. Some Sultanas, black corridors pepper, 2 cans rice milk, with same stuff you've but depending circuit, road time trial or high hill climbs which cyclist are going to need the best nutrition to get form of energy.

Windom Morris Sure. I have real question for vegan people. As honey, egg or dairy are considered as animal products and exploitation, how is your concerns about vegetables or cereal cultivated by exploited humans ?
@bill_tin
@bill_tin 8 жыл бұрын
+Simon Rano I feel like this should be obvious but since you're asking- Vegans are against the exploitation of all sentient beings, including human workers. However you cannot bring up vegetables and cereals without bringing up all the other aspects of food processing (including animal products) in which there might be exploited humans. Vegans will never try to tell you that we live in a perfect world but we are trying to eliminate exploitation in all aspects of our lives. If there's a way we can address this desire better- please let me know because that's a really considerate thing to point out.

I see. I avoid meat as often as I can. Only exeptions are when i'm dinning with friends because I don't want to be that guy that decide the meal.Meat from time to time is no big deal for me. I cut meat for two reasons : first I think eating meat every day is bad for health and second meat production fuck up the environment more than cereal or vegs. But I do not really focus on animals or human condition. Because of human nature you can't know if the product you purchase is really Fair-Trade or Organic and I can't afford trustable products. I also think that animals should be farmed in good conditions and much lower quantity. Some (small) farmers car a lot about their animals and treat them the best they can

Made a batch of these rice cakes recently, about half the amounts used in this video resulted in 24 bars at just over 100 g each. When freshly made these bars were fabulous but after storing them in the freezer they've become a tad dry. As I'd read about people having trouble getting their cakes to settle I might've cooked the rice porridge too thick, so shall try leaving it a little runnier next time which will hopefully correct the dryness.
