There’s no centerpiece quite as dramatic than a salt-baked fish. It’s all about making a tight seal with the salt crust-it forms a mini-oven around the fish, keeping the flavors of the aromatics inside. Add just enough water to the salt until it feels like very wet sand. To test it out, pack a little in the palm of your hand; if it holds its shape without cracking, you’re good to go. (If not, add more water.)

I had a red snapper prepared like this for the first time in 1992 at a restaurant in Mallorca. The salt crust creates the juiciest, most tender sea flesh I've ever tasted in life- thank you for this upload and bringing back some great culinary memories, I haven't attempted to prepare this again myself for nearly 20 years and I've just been reminded what I've been missing!

Just made this yesterday for Valentines... absolutely delicious. Added more citrus such as satsuma oranges, blood oranges and limes. As well as chervil. Fell off the bone from tenderness and it actually needed a touch of salt ontop! Not salty whatsoever.

I suppose you could use it to clean any cast iron cookware you have. But since the salt will have some fishiness odor to it, you'd probably want to throw it away, or kill some slugs with it.

Meh, same genus as all Pacific salmon, practically a salmon, and this method will work with salmon anyway. Not worth being nitpicky on the details.

In this method, salt is used to form a sealed crust of salt to First observe all the moisture and second baked the fish in a sealed environment which makes the fish really delicious. There should be no hole and fish should be fully sealed. This video the crust os not covering the fish and I doubt it does what a salt crust Supposed to do fully.

What does "a box of salt" mean?

A three pound box of salt. Typically located on the bottom shelf of the supermarket where you find the other salts. It'll say kosher salt on it. It's preferred because of the shape of the salt and that it doesn't have iodine which will add color to your fish.

Maggotpunk Oh, three pounds, thank you. In my country salt is usually sold in plastic bags of different size, ranging from 1/4 pound to over 10 pounds. Sometimes it is in a box but here we have no standard package size to be able to say just "a box of salt".

The method for serving, as a means to avoid all that salt overpowering the dish, was unclear. The last shots showed the fish still covered with a significant amount of salt. Perhaps a quick-and-dirty post-edit of the video showing a still shot of the presentation at the end would suffice?

You can tell it is farmed by the haggard fins, however this a good recipe for wild caught samon and trout. I just refuse to eat farmed fish

Christ, the salt is barely even touching the fish. It's on top of the herbs, citrus slices and the fishes skin. It everyone here needs to make their own cooking channels maybe.

Yes, that's correct. The piercing goes through the center of the nostril, the septum, hence the name. She has her piercing turned up into her nose.
