How to make Salted Duck Egg Yolk Sauce（Chinese Mayonnaise）|Liziqi Channel

I used ordinary salted duck eggs in my video. Our products are sea duck eggs from the North Sea mangroves.
Based on our ancestor's recipe, we only used a third of the salted yolks. Add in black pepper, white sesame seeds and bits of seaweed to give the sauce a richer texture，without a trace of astringency.
Fresh, sandy, crispy and soft texture,

In most rural settings, you don't know when you'll get the supply or the resources. So practically speaking, those living there have to think and plan for the long-term and how they can make limited resources stretch for the unforseeable future/seasons. (Yes, she's doing this for a video but the audience have to remember that first and foremost, she's living off the land.)

HAHAHAH I have been reading a lot of novels about this, it may sound stupid to "gain experience" this way but it's really fun 😂 I have learned that guns are not the best weapon, bullets are consumables and the virus is ought have some effects on other animals too (may make them even more hardy and survive a bullet) and it's really a good thing if we can learn the ways to farm, perhaps even ways to differentiate what is safe to consume in the wild and to make tools from the resources we have around us. 😂

Translation: In this video, Ms. Li is promoting her new product - Salted Duck Egg Yolk Sauce. She said they use hens to help hatch the duck eggs and has been doing that since she was little. It takes half a year for the ducks to lay eggs. She made a mixture consists of salt, red mud, ash, water and Chinese hard liquor and coated the duck eggs with it and let the eggs preserve for a month. After the preservation process the yolks are baked, mashed and dried seaweed with sesame seeds and pepper were added to it along with oil to make the Salted Duck Egg Yolk Sauce. She used the sauce to make various dishes including steamed rice mixed with salted duck egg yolk sauce, steamed chicken wings and potatoes coated with salted duck egg yolk sauce. The other two dishes she made which did not have the sauce in them are stir fried egg whites with rose petal and grandma's vinegar soup with vege and rose petals. Lastly, she's giving away free Salted Duck Egg Sauces to 177 lucky fans who leaves comments on her Weibo channel.

my dad did the same thing when i was little. My dad took advantage of a hen to hatch a bunch of ducks. and in some years goose as well. Truth, i swear to god. i'm from same area of her, this is common in rural area. Now I really appreciate what i have learnt during my childhood.

@@BidenSUCKSS Sichuan, her hometown is like 200 kms from mine. The weather is mile, not too cold in the winter (I mean not like Russia, which is why there are vegs growing), summer is not too hot either. However it can be very humid at bother summer and winter, which is why people from there eat a lot of pepper and chili to get rid of water (if there is too much water in their bodies, especially bad waters)

I have same issue of water in my body, can’t figure how to rid of it. I wonder if they grow veggies all year round since the winter is mild ? But you do get snow right?

@@BidenSUCKSS different veggies for different seasons.So , yes. Veggies grow all year around. Some years there is snow, some there is not. To detail on the weather, the 4 seasons are quite explicit from Jan to Dec. The area where she lives is actually where the vast plain meets the Tibetan highland, which is why we can see both ponds & streams and high mountains in her videos.

Hen are far better at brooding than Duck , so it's normal to get a hen to brood the duckling I saw a proud hen mother walking by a pond , the duckling just rushed to the water splashing and diving , while the hen was having a panic attack madly cackling and rushing all over the bank
