Béarnaise Sauce is a classic French sauce that originated in Paris. It's a rich butter sauce that's so versatile, you can use it on almost anything. It's perfect on grilled steaks or chicken, works perfectly on poached eggs. Even on some seafood and vegetables. This version skips the step of the melting and clarifying of butter yet the results are as good.

Looks like it tastes amazing and good job! I do think it's too thick though, Bearnaise is supposed to coat the back of the spoon but still be a tad runny.

All the alcohol is boild out. If you use wine you won't get any alcohole in your body.

It looks delicious! I never heard of the herb chervil. What herb can replace chervil if you cannot find it in your area? What kind of butter was that and where can I find it?

You can leave the chervil out, the tarragon is the main herb. As for butter, that was a French butter. Try and buy grass fed cow butter for the yellow colour and better natural flavour.

Use clarified butter instead. You will get an even better result. And indeed, you can leave the chervil out and add a bit more tarragon. Don't exaggerate though. Tarragan is far more fragrant than chervil. You might also want to replace half of the vinegar with white wine and add only 1 shallot instead of 2 or 3.

I don't think I would be into this, but each his own taste :) A suggestion for those with a water bath - make the reduction as shown, use a nice white vinegar and a white wine, add 2-3 time as much estragon, strain all liquids and reserve.. To my experience this reduction stores actually quite well in a corked bottle in the fridge, so could make extra. - when your wife craves some bearnaise, add a few table spoons reduction, butter and egg yolk to a plastic bag, and put it in the water bath... - when done, combine the mess in the bag with a blender, add rest of estragon, and you have your sauce.. Dont mouth off before you try it, it is significantly easier and more consistent, good for people too nervous to be going at it with bain marie. most resturants make it like mayonaise from sauce base .. its a thick oil with butter flavor .. add a bit of dried herbs and meat stock powder .. done.. this would take too long ;)

It will break once it's cooled. This is the type of sauce we make every day at a restaurant and never EVER save.

This recipe is 100% fail proof. Made it many times now and I've added minced garlic to mine, basically saying you can twist it however you'd like.

This is dumb, how is this simplified? I only see that instead of straining the tarragon reduction you decided to dump your yolks into the pot, this would make for a clumpy and gross Bearnaise without saving much time at all. IMO you should use white wine and lemon juice not vinegar, strain your reduction and just do it right. If you're already going out of your way to find fresh tarragon and chervil and you're a home cook, then making the sauce right in the first place isn't that hard.

Tarragon vinegar actually works better than white wine and lemon juice, and is in most of the classic recipes.
