Nice one! Just a tip, slice it and wrap the slices in parchment paper and freeze it in bag. You get to use it by slices that you defrost in the microwawe and voila, you'll have fresh bread every morning. It will last for weeks.

years ago i made a starter and bread from the book Beard on Bread (james not whiskers) - it was a sour dough rye - scrumptious with soup or stew or butter and jam

FYI: Reverse Osmosis is the BEST filtration system there is! You can have the system installed professionally or you can purchase the system from Lowes for $200 to install under your sink. You change the filters according to the instructions. The different filters are changed on a three and six month schedule. The filters are not that expensive. One of the filters is $60, but this filter lasts a long time. It's definitely worth it! Enjoy!

Did your sourdough float? I read starter must float if not it means not ready. What do you think?

How sour is it? Is it super sour like San Francisco Sourdough or mildly sour? That bread looks so yummy, Craig, so nice! I don't know if I missed it but where did u get your starter? I'm a San Francisco native, so I need to be impressed, lol😅 thank you for sharing..

Mine is fairly mild in flavor. The sour is more distinct when I increase the time between feedings. I got my starter on Amazon and yes it is supposed to be a San Francisco variety if I'm not mistaken.

I tried something like that years ago where you had a starter and fed it everyday but even though we had two kids at home then we could never keep up with using it all. You were supposed to give some a;way every day and we didn't have people to give all that too. I'm wondering if this is different. Therr's only two of us now. My son and dil make sourdough (live 1500 miles from me) but they have 9 children and use a lot of bread. I'm going to look for details on sourdaugh to see if you have to use some of it every day like I had to do with the one I think was called Herman

You can feed your starter every day if you have use for it. Otherwise you can put it in the fridge after feeding to put it in a dormant state. I've let Edgar rest in the fridge for several weeks before waking him up again.

I used 12oz of water and it’s simply not enough. Are you sure it’s 12oz? For 1lb 4oz???

Yup. 4oz of starter, 12oz of water, 1lb 4 oz of flour, 20g of salt. Results may differ if the hydration of your starter isn't 100%.
