Hi Everyone, I wanted to mention that the shelf-life for sprouted flour is about 6 months if stored in an airtight container in a cool, dark place - like a pantry. Also, you can use sprouted flour to make yeasted breads or quick breads. I usually make sourdough for bread so I rarely use sprouted flour for that. However, when it comes to quick breads, I prefer to use sprouted flour because it is so easy - - - no different than using any other sort of flour. If I don't use sprouted flour for my quick breads, muffins, etc, then I have to use the soaking method, which I do not like. It is where you soak the flour overnight in a acidulated liquid at room temperature. Then the next day, you add the rest of the ingredients. Since quick breads, muffins, etc. should not be over-stirred, I find this method of having to stir in everything after the flour is wet to produce a tougher end product. That is why I treasure using sprouted flour for these type of baked goods. Love, Mary

Do you have to do this process for all grains? Ex: hard white wheat and soft white wheat? And how many cups of flour did you get from 2 cups of grains?

My mother had to see a nutritionist..they are still peddling seed oils and demonizing healthy fats. I'm not sure if it's ignorance or malice at this point.

The reason you never saw this is because our conventional medical system is flawed in terms of nutritional knowledge and prevention of disease and illness. You are simply taught basic nutrition knowledge based on the government recommendations that are influenced by the agricultural industry. Thats why we were taught to eat 6-11 servings of grains per day! Its all about money not health. Just like the medical system.

In Hungary we have a sweet made from germinated wheat. Csíramálé or csiripiszli or kőtés. We eat it during Lent before Easter. It is very lengthy and complicated to prepare, so today few people make it at home. However, fortunately, in some parts of the country it is produced in small plants. I also learned the recipe from my grandmother and I make it every spring. The germinated wheat is ground through a meat grinder, then soaked in water and filtered. then the strained juice mixed with flour into a batter and baked in pans. The finished cake will be very sweet, without adding sugar.

Hi Mary, I have been absent for a few years. But I am so glad to be back to see your channel. The most incredible home nurturing takes place here at Mary’s Nest. I.e. have had some hard red winter wheat in my refrigerator for about six months. I took the seeds out about 2 cups and soaked them overnight. Then I put them in a sprouting tray watering them a couple of times a day it’s been about three days and the seeds smell fermented and they are slightly soft not hard like the unfrozen stored seeds. I use to make wheat grass. Many have sprouted, but I wondered if I should toss these and start again with the gentler soaking process

yjanks for this! Orowheat used to make sprouted wheat bagels, and I was heavily addicted, I knew nothing about nutrition at the time, it was just that the taste was amazing!

Hi Mary! I've done lots of sprouting of seeds for salads but recently have moved to milling grain and making bread (LOVE my Mockmill!) I knew I wanted to try sprouted flour and so I watched your video to see what I might learn. I have a nice wide shallow colander and I used your method...OMG! it was so quick. I put the colander inside my microwave to keep it warm and draft free as the kitchen is cold. I had lovely little sprouts in about 36 hours! and into the dehydrator at 110. I now have wonderful flour waiting to be ground and used. I noticed that the sprouted grains ARE a touch sweet and there's a depth of flavor I haven't found previously. Looking forward to using you wonderful method all the time! Thank you. I dearly love your videos.

Great video. So informative! I have a couple of questions though. How long can the sprouted and rried grain be stored in best conditions in vacuum sealed jars, and you mentioned the flour being good in quick breads. Does that mean it cannot reasonably be used to make yeasted breads? Looking forward to more videos. Thank you so much.

This is so embarrassing to admit but here it is anyway-just finished sprouting wheat berries and was so excited with how they turned out, I called my daughter to come over to see them before I put in dehydrator. You are right that they sprout much, much better in the colander. See how you are inspiring us!!! 🤗

I deal with Osteoporosis-- I do not want to take the drugs - reading up on nutrition- I had previously started to hand mill grain for bread and have several grains and a new grain mill. However studying osteo nutrition suggests get rid of wheat from diet. It was a shock - but watching a Peter Reinhart video he had info concerning sprouted grains - takes out all the anti nutrients that keep the body from absorbing the good nutrients- this is very exciting bc learning a holistic approach to reverse the Osteoporosis is doable!

It is the glutein in modern wheat plus the use of herbicides that aggrivates osteo problems. Emmer, einkorn and maka flour are ancient grain flour. You can make pancakes with Maka and premium sea salt. Simple and gets you started. Lovely video lovely lady.

I dont have a dehydrator but I do have a freeze drier..... im thinking that I could sprout the grains and then freeze dry them which would be even more preserving of the nutritional value of the grains and then make flour from the freeze dried sprouted berries. Also the benefit of freeze drying is that there's even more moisture removal guarantee from the sublimation process.

I don't have a food scale or a flour mill. However there's an Amish market a few miles from me. I can get sprouted whole wheat flour there. So that's what I will do.

Mary: another way to test the dryness of your sprouted grain is to place a kernel in you mouth placing it between your front teeth when you bite down if the grain crunches between your teeth. Or place a kernel near your molars and chew it if it is crunchy it is dry. Don't break your teeth if the grain is too hard though.

Just make sure that you cover the sprouted grain with a very light covering such as some screening or a thin flour sack towel or dish towel. Keep me posted on how it turns out. I dry my soaked nuts on top of a radiator in winter, I put the nuts into a colander and leave them on the radiator for about three days.

My question is that when I put water in a jar on the table overnight, do I have to keep the cover on or off?? Also, how long can I keep sourdough starter in the fridge before I have to use it up?? ❤️

If you don’t want to use your sourdough starter right away, you can put it in the refrigerator and just feed it once a week to keep it alive. You never want to really use it all up. What if you turn your oven on and off a few times to keep the temp down? And of course with the oven door slightly open all the time. It probably won't be as hot as the lowest temperature that your oven goes. Just a thought/suggestion that might work better than just having it at 170° the whole time.

I just made your easy no-knead sandwich bread today, and then topped off a couple of slices with the low-sugar strawberry jam your video showed me how to make last Sunday. Now I'm "so intrigued" on sprouting grains. I looked @ Amazon for the berries and I see things like "Soft white" berries and "Hard Red" berries. Can you explain the difference and which one I should use? My husband has trouble chewing due to radiation therapy from years ago, so I need to use the ones that produce the softest product possible. But I LOVE these incredible avenues you have opened for me. Thank you.

Oh Elizabeth! I am so happy to hear how you are enjoying making these foods! And yes, I understand that you want to make soft foods for your husband. Hope he is doing well now. I would recommend that you start with hard red wheat berries. Those are your basic "whole wheat" berries for baking bread. Soft wheat berries are also whole wheat but are better for using when baking pastries. Once ground, they make pastry flour. Hope this helps. Unfortunately my husband will eventually lose all of his teeth, and because of the radiation there is no hope for implants or dentures as the bones in his gums are decaying. We take it one day at a time. When he had to have some oral surgery, I found you can just about "liquify" anything. I turned to liquid spaghetti & meatballs, pot roast, oatmeal + scrambled eggs, to name a few. It's all about the flavors! Now that I make your mineral soup and getting whey from things like yogurt (I'm making my own cream cheese)...I can get the probiotics he needs and huge doses of minerals and vitamins in a natural way...no pills or liquid medications! You are a true blessing to me!

Elizabeth Temple - Oh Elizabeth!! You are such a wonderful person to work so hard at creating good foods to give your husband proper nutrition. Does he ever enjoy probiotic rich cool beverages like kombucha, water Kefir, or even something very simple like sparkling water with a splash of honey and teaspoon of raw apple cider vinegar? That’s another great way to get probiotics into his diet. My father had Parkinson’s disease and passed away a few years ago but I know what you mean about having to liquefy foods. Toward the end of my dad‘s life, all he could eat were basically puréed foods. Like you, I discovered pretty much anything can be puréed and still be tasty. If I recall correctly, sprouting the grain converts some of the starch to sugar. That is why the resulting baked goods are a bit less dense and are more digestible.

Hello Mary, I love your recipes and videos very much. You are full of love and knowledge. I need your advise please. Can I use the dry granular yeast straight from the fridge where I have been keeping it recently. I noticed that my bread rises then the top layer separates after cooling. Perhaps you can guide me on what I’m doing wrong. I would really appreciate it

Great question. Yes, you can use the yeast right out of the fridge but proof it in warm water 110F). Hmmm...as to the split on top, that is usually normal. Can you describe it more to me? Thanks! Love, Mary❤️🤗❤️

Thanks for your quick response. I am making the bread round and on a baking tray. After the bread cools down the skin on top seems to collapse thus creating a hallowing or a between the top crusty layer and the spongy middle layer. I am baking the bread on 350 f about 15 minutes. Could it be it’s not cooked long enough. Have a great day

Could you please share a recipe for sprouted legume bread? ( compared to Natural Grocers Organic loaf by Vitamin Cottage). How do you sprout millet,barley,,garbanzo beans,spelt, lentils? Will the cost be less or more for homemade?

Hi Adanna, Thanks so much for visiting! That is an excellent question! Yes, you can air dry the sprouted grains - especially if you live in a hot dry climate. You can cover them with a very thin dish towel or flour sack towel - to protect them from bugs - and let them dry in the sun. Hope this helps. BTW - Do you enjoy making traditional foods? I used to be able to get Ezekiel bread, but can't get it in our area any more. As much as I love swishy white bread, I liked this in a different way.

The first part worked beautifully. Got them sprouted and dried and ground into flour. The bread rose perfectly but when I took it out of the oven it totally collapsed and the inside was completely mushy. Tried it twice with the same result. Any idea as to why?

The blender heats up the grain and it spoils quickly, she recommends freezing the wheat berries before blending. I’m using my blender for a small amount that I use immediately… but I am a novice

I need to start re-incorporating foods and I need to figure out what to do, so thanks! Is a vacuum sealed canning jar an air-tight container one could use for wheat berries and sprouted flours and such?

Question: After you dehydrate the grain at 110°, grind it into flour, and then you use it in baking where most recipes call for a higher temperature... you are then killing the live food. Are there recipes out there with lower temps that keep the live food status, other than nut bars? I will definite be sprouting my own grain and make flour, but I sure would love to know if you are aware of any recipes for breads or such that bake at the lower temp. I used to sprout grain years ago when I went to Optimum Health Institute and learned to make raw foods. This is a much easier process for sprouting, IMO. I was wondering what happens if you soak the wheat berries to long. This was my first time sprouting wheat and I ended up soaking the berries for 3 days - when I discovered error on my part i have continued with rinsing and returning to covered bowl twice a day. Do I need to start over due to oversoaking? I am starting on day 5 and am starting to see small tails. So just wondering what to do. So just wondering what I should do at this point.

Just a quick thought on the tap water...if the water straight out of your 'city water' faucet kills the process of sprouting a grain/seed etc., well, what should that tell us about the effect it has on our bodies/cells? Just thinkin' here.

I have been sprouting wheat and beans for sprouts for years. These are only germinated. You have created what is known as malted wheat. The "sprouts" have not yet appeared. Sprouts are actually a vegetable. Nothing wrong, still very healthy.

Yes, you can dry in the sun if you live in a hot dry climate. And make sure you cover the grain with some sort of thin protection so it stays safe from insects, etc. but can still dry. Hello Mary, this was a great video. I didn't understand the soaking flours over night vs sourdough vs this way. I had a question about storage. I purchased einkorn wheat berries. I put them in our freezer for 72 hours before packing them in mylar bags. Should I have sprouted dried & then put them in mylar bags? Thank you

I would leave the Berries alone prior to storing them in mylar, (make sure they haven't started sweating after the freezer, if so Make sure they are dry again before storing) do this sprouting process when you take some out for using soon. Rain Country sprouts, dries, then stores the Berries in glass jars, these she will use in a few months or less.. but her Bulk Berries are stored safely away.
