Recipe 1: Mumbai Style Khada Pav-Bhaji:
For Red Paste:
- 15 to 20 Dry Kashmiri Red Chilli (Soaked & boiled)
- 100 gm Dry Garlic
- Water as per required
For Bhaji:
- 3 tbsp Oil
- 3 tbsp Butter
- 1 tbsp Garlic Water
- 2 Onions (Finely Chopped)
- 3 Tomato Puree (Blanch)
- 1 Capsicum (Small Cube)
- 3 Tomato (Small Cube)
- 4 Potato (Boiled & Small Cubes)
-1/2 cup Cauliflower (Boiled & Florates)
- 1 tbsp Kashmiri Red chilli Powder
- 1 tbsp Pav Bhaji Masala
- 1/2 cup Green Peas (Boiled)
- 1/4 tsp Turmeric
- 1 tsp Kasuri Methi
- Water as per required
-Salt as per taste
- Lemon Juice
- 3 tbsp Butter
Lahori Chisti Pulao:
For Rice:
- 250 gm Rice
- Lemon Juice
- Ginger (Chopped)
- 2 Slit Green Chilli
- 1 Small Piece of Mace
For Pulao:
- 3 tbsp Oil
- 1/2 tsp Sahi Jeera
- 2 Dry Red Chilli
- 1 tsp Whole Coriander (crushed)
- 2 Onion (Chopped)
- 1 tbsp Garlic Paste
- 1/2 tsp Ginger Paste
- 1/2 tsp Green Chilli Paste
- 1 tbsp Red Chilli Paste
- 2 Tomato (Chopped)
- 1/4 cup Cabbage (Julian)
- 1/4 cup Carrot (Julian)
- 4 - 5 Baby Corn (Julian)
- 1/4 tsp Turmeric
- 1 tbsp Red Chilli Powder
- 1/4 cup Chole (Boiled)
- Lemon Juice
- 1/2 tsp Dry Mango Powder
- 1 tsp Kasoori Methi
- 1 tbsp Almond Paste (Blanch & Paste)
-Salt as per taste
- Coriander (Finely Chopped)
- Boiled Rice
Street Style Paneer Bhurji:
- 3 tbsp Butter
- 1 tbsp Chilli (Chopped)
- 1 tbsp Garlic Paste
- 2 tbsp Oil
- 1 tbsp Besan
- 2 Onion (Finely Chopped)
- 2 Tomato (Chopper Chopped)
- 1 tbsp Red Chilli Powder
- 1/2 tsp Turmeric
- Coriander (Finely Chopped)
- 100 gm Paneer
- Water as per required
- Milk as per required
- 1/2 tsp Garam Masala
- Coriander (Finely Chopped)
- Butter
- 4 Breads (For Serving)
- Ginger (Julian)
- 2 Green Chilli (Slit)
