Well… yeah? You want to increase the volume of lime juice without sacrificing much flavour and acidity, you gotta add citric acid to that water. I’m also guessing mixing the citric acid with the muddled lime peels adds a more concentrated lime flavour to compensate for the water diluting the lime flavour (not just the acidity)

Only useful if you are dealing in a massive bulk of juice or you aren’t really hitting juice pars. What they don’t tell you is you have to adjust recipes because this juice has a higher acidic content.

Soak your citrus in a strong solution of baking soda and water for about half a day, and then wash them by hand if you intend to consume the peels. Citruses are treated with fungicide that you dont want in your final product.

For anyone making it, if you want consistency( consistency is key to a successful bar), then use this formula. For lime super: Peel limes, weight peel on a double 0 scale(1.xx style of scale) Juice all limes once peeled. ( I usually add the juiced lime juice right before the water) Take weight of peel and multiply by the next number. Citric: (weight of peel) x (0.66)= amount of Citric in grams. Magic: (peel weight) x (0.33) Water: (peel weight) x (16.66) Muddle or what I do is use a tin on tin shaker, toss the dusties and peel in there, shake for 5 minutes. Let sit for 30~60mins. (I’m usually doing it during down time on a shift so time varies). MAKE SURE CONTAINER IS SEALED. Weather that is a shaker or a cabrio. Then go ahead and weigh the water. I use a cheapo winder water glass that’s clean and zero it out on the scale because it is light, and it is easy to refill. Usually I use receipt paper and write down the weight for each pour and periodically add the values and I go slower towards the end. (Easier then it sounds I promise) Make sure to use some of the water to rinse out the shaker, get all that good stuff in there. Stir and let set for a little bit. Make give the cabrio/ container a good few shakes/sloshes. It will always some out the same and guests will have a consistent cocktail. For lemon: same process except remove the malic acid step. You can do this for any other fruit pretty much btw. Edit: nice video man! Preach sustainability.🤙🏽🍍

Blanch your lemons and limes for 15 seconds and then chill in cold water this will remove most of the pesticides on the peels so that your end result is healthier I mean I guess drinking kinda cancels that health buff anyway so I guess whatever lol

Ive tried something like this before and tbh dont reccomend. Sourness goes well with a lot of stuff, and while lime peels are really sour, they are even more bitter. It kind of overpowers the taste of the rest of the juice.

Yes. Replace the Malic acid with more citric acid instead. The ratios will be a bit different because you tend to get more peel from a lemon but Kevin Kos has a great video and a super juice calculator for lemons, limes, orange, grapefruit, and kumquat on his website to make it easy to do with even just one fruit
