These look delicious! I would have never thought of using plantains as the outside of an empanada. This really is like sweet and savory together. Love the blend of picadillo and cheese in the middle. Nata it looks so delicious!!!

very nice. I just tried a diff version of these, using bit of cassava flour to 'thicken' the dough, turned out great! I made them much larger though as I wanted to keep the out edge 'clean' and fully sealed. You can use a fork to crimp the edges and even any knife to trim off the uneven evdges to get that 'perfect' shape/look, many ways indeed. I would highly suggest using cling/saran wrap instead of the parchment paper.........way easier n better to making the shape. Salaaaluuuude!!

OMG these look incredible!! I love the picadillo filling SO much and what a great idea to make the pastry crust with the plantain to give it some sweetness. I love all thing sweet and savory...Great recipe!!
