This chicken recipe is just one of a hundred ways to cook chicken. It is delightful.
RECIPE: Ingredients: 4 Chicken thighs, 1 onion,1 medium tomato, 1cup coconut cream
Fresh Cilantro and Fresh Peppermint.
METHOD: Wash and season chicken with salt, black pepper and garlic powder for 30-60 minutes.
Put 2 tablespoons coconut oil in pan on medium/high heat. Put chicken thighs skin down to start a sear. Sear for 5 minutes. Add butter. Turn and sear on the other side. Turn again. Smear the spices on top of chicken as seen in video. Add slices of onions and tomatoes. Turn once again. Chicken should look brown and crispy on the skin side. Add Coconut Cream and incorporated into Chicken turning over and back again to skin side. Add 2 cup water. Add Cilantro and Peppermint. Cover and simmer for 45 mins or until chicken is tender and soft to your liking.
SPICE MIX: Allspice, garlic, ginger, black pepper corns, fresh thyme. Put in a spice grind and make a paste or pound in a mortar with pestle. You can substitute powder ingredients for fresh if fresh is not available.
