RECIPES:
Samosa Pastry:
2 cups flour, 1 tsp salt, 2 tsps each Cumin & Ajwain seeds
3 tblsps plant based butter or oil
3/4 cups water (more or less depending on humidity outside) Dough should be soft, but not too sticky.
METHOD: Sift flour in a bowl. Add salt and seeds. Mix. Add butter and rub in with fingers until all the butter is incorporated into the flour. (If you use oil, sprinkle the oil over the flour and gently life flour and oil with fingers to incorporated) Particles of butter should not be smaller than the size of a kidney bean. Add water, mix and knead dough for 7-10 mins. Let dough rest for minimum 30 minutes.
Roll out dough into a disc about 6-8 inches (you can make bigger balls if you wish) Cut in half as shown in video. Place potato filling and proceed as shown in video.
POTATO Filling:
4 large potatoes, 1 cup green peas, 1 medium red or yellow onion
2 large cloves garlic (crushed)
2 inch piece of ginger(crushed)
6-8 green Chile pepper(optional) or 1 tsp cayenne pepper
salt and black pepper to taste
2 tsps each fenugreek powder and coriander powder(you can use fresh coriander/cilantro)
2 tsps turmeric and 1 tsp Garam Masala
8 tblsps oil for sautéing
METHOD: Boil potatoes until tender. Peel. Chop into small chunks. In a large pan on medium temperature, add oil.When oil is hot, add onions and saute for 1-2 mins. Add garlic and ginger and stir. Add all powdered spices and stir for 2-3 mins. Add peas and incorporate. Add potatoes and incorporated as shown on video.
Let cool at least 30 mins before doing the stuffing. It is best to do the potato filling first. While it is cooling, you can do the dough. It will be resting for at least half hour while you wait for the dough.
